Spite and Sour Cream in the WonderlandIn this paper, we will deal with stereotypes that one of the most versatile Serbian artists, Momo Kapor, explains and interprets about his people in the book A Guide to the Serbian Mentality. Since the appearance of the earliest travelogues about the Balkans and its inhabitants, the image that was transmitted further into the world has represented this area as wild and its people as insufficiently civilised. Writing for the review of the national airline in order to interest those who will soon land in Serbia, to better explore the space where they found themselves, Momo Kapor uses previously adopted stereotypes in an interesting way – some deepening and some denying, sometimes establishing new ones. In order to better understand the function of stereotypes in Kapor's painting of Belgrade, we will compare his descriptions of the capital of Serbia with the capital of Bosnia from the Sarajevo trilogy. The article presents the results of developing technology for the production of curd cake using a low-calorie sweetener sucralose. An analysis of literary sources has shown the relevance of developing food technologies with lower calories and glycemic index as a preventive measure in the fight against an increase in diabetes. The implementation of this direction in the form of a partial replacement in the sugar formulation for effective sweetenrs sucralose is proposed. The obtained integral quality estimates of sugars and sucralose at the levels of 0.82 and 0.60, respectively, using qualimetric analysis on five characteristics allowed us to conclude in favor of the predominant use of sucralose. The optimization of the technology for the production of curd cake using sugar substitute sucralose was carried out. Scientifically based production criteria for chocolate semi-finished products using fruit and vegetable powders2019 •
Chocolate glaze consists mainly of sugar (50%) and fat (35%) and is a high-calorie semi-finished product with a high content of simple carbohydrates. The standard for glaze provides the possibility of producing chocolate glaze with fruit and vegetable components, which reduces the content of simple carbohydrates. Studied and justified the criteria for the production of chocolate glazes with different contents of fruit and vegetable powders. Analysis of the rheological parameters of chocolate semi-finished products showed that the introduction of fruit and vegetable powder instead of part of the sugar leads to a significant change in the nature of the rheological behavior of the semi-finished product. The yield strength increases from 3.4 to 12.6 Pa as the proportion of fruit and vegetable powder in the formulation increases. Modern ways of verbalizing a long-ago sacred concept, such as the deliberate killing of an enemy, who has threatened the existence of a kin or a tribe are investigated in the article. Such a murder in ancient times has been considered as a sacred act, sanctified by the necessity of survival, and therefore heroized. It is considered so now, but there is an unwritten taboo on direct statements on it because of the moral principles and remorse. The source material for this paper includes the published works of three well-known Ukrainian Telegram-channels and Internet meme, promulgated from February 24, 2022, i.e. during the period of Russian-Ukrainian war. Four cultural-symbolic codes to express the concept of murder have become the most popular in wartime, namely obscene, spectacular, agrarian-industrial and culinary. They are used to create new euphemisms and paremias. The obscene code uses a fairly significant layer of vocabulary related to the lower body. The spectacular code is an indisputable product of modern mass culture. The agrarian and industrial codes also belong to the military mainstream, and some imaginary strategies for the use of war prisoners and enemy corpses are detailed with their help. The culinary code, in which the destruction of enemy troops is described as the process of cooking various meat and vegetable dishes with the help of fire or grinding, has gained particular popularity. New cultural-symbolic codes (except the spectacular) have a mythological basis, creatively reinterpreting and playing with ancient mythologemes. In particular, the mythological ideas about life as a vegetation cycle, about the eternally hungry death-devourer and about the culinary treatment of raw products with fire as a way of their civilizing have served as the foundation for the formation of new euphemisms, and ritual vituperation is used as a way of humiliating and morally destroying the enemies. У статті досліджуються сучасні способи вербалізації такого віддавна сакралізованого концепту, як скоєне під час війни зумисне вбивство ворога, який загрожував існуванню роду чи племені. Таке вбивство у давнину розглядалось як сакральне дійство, освячене необхідністю виживання, а відтак було достоту героїзоване. Таким воно вважається й нині, проте в сучасному суспільстві існує неписане табу на прямі висловлювання про це з огляду на моральні принципи та докори сумління. Джерельним матеріалом для розвідки стали публікації трьох широко відомих українських Telegram-каналів та фотожаби, оприлюднені в Інтернеті в період від 24 лютого 2022 року, тобто в ході російсько-української війни. У воєнний час для вираження концепту вбивства актуалізувались обсценний, видовищний, аграрно-промисловий та кулінарний культурно-символічні коди, за допомогою яких утворюються нові евфемізми та паремії. Обсценний код використовує доволі значний шар нецензурної лексики, пов’язаної з тілесним низом. Видовищний код є безперечним витвором сучасної маскультури. За допомогою агропромислового коду, що теж потрапив до воєнного мейнстриму, деталізуються уявні стратегії використання військовополонених та трупів ворогів. Особливої ж популярності набув кулінарний код, у рамках якого знищення військ противника описується як процес приготування різних м’ясних та овочевих страв за допомогою вогню або подрібнення. Нові культурно-символічні коди (крім видовищного) мають міфологічне підґрунтя, творчо переосмислюючи та обіграючи давні міфологеми. Зокрема, фундаментом для утворення нових евфемізмів послугували міфологічні уявлення про життя як вегетаційний цикл, про вічно голодну смерть-пожирательку та про кулінарну обробку сирих продуктів вогнем як спосіб їх окультурення, а також про лайку як спосіб приниження й морального знищення ворога.

(OBTAINING FERMENTED DAIRY PRODUCTS WITH ADDITION OF LACTULOSE) ПОЛУЧАВАНЕ НА МЛЕЧНОКИСЕЛИ ПРОДУКТИ С ДОБАВКА НА ЛАКТУЛОЗА2014 •
Fermented dairy products from cow milk with addition of lactulose are produced, which have well known health characteristics. The dynamic of the process of lactose fermentation is investigated with addition of different amount of the disaccharide - 1, 2, and 3 % and a control sample. It is found that the dynamic of biochemical transformation of lactose to lactic acid and the coagulation of the milk in the versions with different amounts of added lactulose are similar to the control sample. The organoleptic profile of the obtained products, show that they are characterized by indicators - texture, color, taste and aroma typical for this group of products.
