Abstract

L'invention concerne un procédé de production d'une enzyme d'intérêt, à l'échelle industrielle, qui consiste: a) à faire fermenter une souche microbienne produisant une enzyme d'intérêt dans un milieu de fermentation comprenant au moins une source N complexe préhydrolysée, lesdites sources N étant stérilisées séparément de toute autre source contenant des glucides et la préhydrolyse étant réalisée par addition d'un acide et/ou d'une enzyme hydrolytique; et b) à récupérer l'enzyme d'intérêt du bouillon de fermentation.
