Description
Soft Alcoholic Cocktail
The present invention relates to the food industry, more particularly, to the branch of beverage production, and can be used for the production of soft alcoholic beverages with the taste and flavor of berries and fruits, as well as vodka.
Known is a soft alcoholic cocktail with the taste and flavor of melon (RU Patent 2154099) that contains a substance with the taste and flavor of melon, a substance with a sweet taste, rectified ethyl alcohol and water.
A disadvantage of said cocktail is the difference of its resultant taste and flavor from the taste and flavor of the cocktail containing natural melon and high quality vodka.
Known also is a soft alcoholic cocktail (RU patent Application 2000114506) that contains a taste and flavor producing substance, citric acid, a substance with a sweet taste, ethyl alcohol, concentrated juice with a dry material weight percentage of from 9.0 to 11.0 wt.%, the concentration of said taste and flavor producing substance being from 0.1 to 3.9 kg per 1000 1 of the final cocktail. Moreover, said cocktail may contain a coloring agent, a turbidizer, carboxymethyl cellulose, a preservative and carbon dioxide.
A disadvantage of said cocktail is the weak taste of the natural cocktail it simulates that contains natural fruit juice and high quality vodka.
Therefore the objective of the present invention is to provide compositions of soft alcoholic cocktails with an elevated concentration of biologically active substances, i.e. natural food acids
and vitamins, that simulate the respective natural cocktails with the taste and flavor of juices and pieces of fruits or berries and high quality vodka.
Said objective is achieved using a soft alcoholic cocktail comprising an aromatic agent with the taste and flavor of melon, or an aromatic agent with the taste and flavor of peaches, or an aromatic agent with the taste and flavor of pears, or an aromatic agent with the taste and flavor of strawberries, or an aromatic agent with the taste and flavor of apples, or an aromatic agent with the taste and flavor of cinchona, juice with a dry material content of 65 to 75 wt.%, an acidity regulator, a substance with a sweet taste, a coloring agent and/or a turbidizer, rectified ethyl alcohol and water. The flavoring agent with the taste and flavor of cinchona can be any Tonic flavoring, the flavoring agent with the taste and flavor of melon can be any Melon flavoring, the flavoring agent with the taste and flavor of peaches can be any Peach flavoring, the flavoring agent with the taste and flavor of strawberries can be any Strawberry flavoring, the flavoring agent with the taste and flavor of pears can be any Pear flavoring, the flavoring agent with the taste and flavor of apples can be any Apple flavoring, the acidity regulator can be any acid approved for use in beverage production, the juice can be any juice containing liquid, preferably, concentrated juice. Concentrated apple juice can be used in a dominating amount, but also concentrated orange, lemon, pear, grape and other juices can be used. To achieve said technical result any food coloring agent can be used that is capable of producing in the final product the color of a cocktail that contains juice and pieces of an appropriate fruit or berry. The cocktail may additionally contain a base with the taste and flavor of an appropriate fruit or berry and/or turbidizer, and/or preservative, and/or carbon dioxide. The preservative can be sodium benzoate m an amount of from 0.14 to 0.20 kg per 1000 1 of the final product, or
sorbic acid. Carbon dioxide is preferably used in an amount of from 3.5 to 5.0 kg per 1000 1 of the final product.
The taste and flavor of a natural cocktail that contains juice, pieces of natural mature fruits or berries and high quality vodka can only be achieved by the combined use of taste and flavoring agents (a flavoring with the taste and flavor of an appropriate fruit or berry, and/or a flavoring with the taste and flavor of cinchona, and/or an appropriate base, juice with a dry material concentration of 65 to 75 wt.%, ethyl alcohol), taste agents (acidity regulator and a substance with a sweet taste), as well as a coloring agent and/or a turbidizer, wherein said substances are used in the amounts as presented in the first of the Claims contained herein.

Prior to the production of the soft alcoholic cocktails, the quality of the water should be improved using any appropriate equipment to the level to meet the requirements to the water used for the production of beer and nonalcoholic beverages. The rectified ethyl alcohol is mixed with an equal volume of the water prepared as above with permanent agitation. The rated amounts of citric acid, flavorings, concentrated juice, coloring agent, turbidizer and preservative are dissolved in a small amount of water with permanent agitation. After thorough agitation the prepared sugar syrup is added. The prepared solution of rectified ethyl alcohol is added to the solution obtained as above and the resultant mixture is thoroughly mixed. The resultant homogeneous solution is combined with water to a volume of 1000 dm3 and the final product cocktail is carbonated and bottled into plastic, glass or metallic containers.
The soft alcoholic cocktail produced according to the present invention with observance of the quality and quantities of its components as described in independent claims contained herein has
the taste and flavor of a natural cocktail that contains juice, pieces of fruits or berries, and high quality vodka.

Soft alcoholic cocktail that contains taste and flavoring agents, an acidity regulator, a substance with a sweet taste, rectified ethyl alcohol, juice and water, characterized in that it additionally contains a coloring agent that produces the yellow color of the cocktail, and/or a turbidizer, said taste and flavoring agents being flavoring agents with the taste and flavor of melon and cinchona, the concentrations of said ingredients per 1000 1 of the final product being
