Abstract

Erfindungsgemäß wird ein Galactomannan mit Mannose/Galactoseketten mit einem Mannose zu Galactose Verhältnis von mehr als 5,5:1 bis 10:1 zur Verfügung gestellt, das dadurch gekennzeichnet ist, dass Mannose/Galactoseketten mit einem Mannose zu Galactose Verhältnis von weniger als 5:1 weitgehend abgetrennt sind. Das erfindungsgemäße Galactomannan kann insbesondere im Gemisch mit Carrageenan oder Xanthan als Verdickungsmittel eingesetzt werden.
