CANNING APPARATUS.
To all whom it may concern:
Be it known that I, \NILLIAM WnAR'roN l/VILSON, residing at Dallas, county of Dallas and. State of Texas, have invented certain new and useful Improvements in (anning Apparatus, of which the following is a s ecilication, reference being had therein to t ie accompanying drawing.
This invention relates to a canning apparatus, and particularly to a construction wherein a reticulated tray is supported within the boiler.
The invention has for an object to provide a novel and improved construction of the boiling receptacle having frustums of cones attached to the bottom thereof to secure a quick and economical heating of the water to the boiling point in connection with a reticulated tray for su porting the material to be cooked adjustalily above the bottom of the boiling receptacle.
A further object of the invention is to pro vide a novel and improved construction for effecting this adjustment comprising bails mounted u on the tray and having handles together with supporting posts to which the bails may be adjustably connected at different points.
Other and further objects and advantages of the invention will be hereinafter fully set forth and the novel features thereof defined by the appended claims.
In the drawing:Figure 1 is a perspective of the invention; Fig. 2 is a longitudinal section thereof; Fig. 3 is a perspective of the adjustable bails and hand holds of the tray.
Like numerals refer to like parts in the several figures of the drawing.
The numeral 1 designates the boiler which may be of any material or configuration suitable for use upon a cooking stove or other heating apparatus. This boiler is provided with apertures at its bottom which communicate with the frustums of the cones 2 attached to the bottom of the boiler by their smaller ends, and the larger ends of said frustums being disposed downward and within the area of the bottom so that they may contact directly with the fire, while the bottom of the boiler is supported upon the top of the heating apparatus. The enlarged bottoms of these cones is indicated at 3, while the necks 4 thereof communicate with the boiler through the opening at that point so as to secure a complete circulation of the Patented July 7, 1908.

Within the boiler a reticulated tray or basket 7 is disposed and is adjustably supported by means of the posts 6, .having a series of holding recesses therein, and removably supported at the ends of the boiler by means of the pockets 5 into which they are fitted. This tray is provided with adjustable bails S pivotally connected thereto, and pivoted to each of these bails is a hand hold 9 so attached that the upper portion of the bail may be engaged with the sockets on the end post 6 to support the tray adjustably at any desired height relative to the bottom of the boiler. Both the bails and hand holds are mounted to fold downward upon the tray so as to facilitate the packing and storage thereof, as desired, while the end pieces are removable from the pockets in which they are supported for a similar purpose. All of the parts may therefore be folded within the boiler when desired.
In the operation of the invention, the material to be cooked is supported in the tray and may be readily adjusted relative to the bottom of the boiler so as to e'llectacooking within the desired time, while the construc tion of the folding bails and hand holds renders the tray easily removable after the cooking is completed, and conveniently folded for storage and transportation. The construction of the boiler with the frustums of cones at itslower portion provides a most rapid heating of the water within the boiler thus saving time and fuel and providing an increased area of heating surface for that purpose. It will therefore be seen that the invention presents, a simple, efficient and economical construction of boiler particularly adapted for use in canning or cooking material for that purpose, as the supporting of the tray in connection with the rapid heating of the water enables the goods to be cooked or steamed and maintained at a high temperature when the closures are applied to the canning receptacles so as to prevent subsequent loss of the fruit or vegetables owing to the closure of the receptacles at an improper temperature.
Having described my invention and set forth its merits, what I claim and desire to secure by Letters Patent is 1. In a canning apparatus, a reticulated tray, bails pivotally attached thereto at opposite ends, a boiler within which said tray is disposed, hand holds pivotally attached to each bail at its central portion, and means for adjustably supporting said bails upon said boiler.
2. In a cannin apparatus, a reticulated tray, bails pivota ly connected to the opposite ends thereof, and hand holds pivotally connected to each of said bails at their central portions and extended therefrom.
3. In'a canning apparatus, a reticulated tray having a bottom and sides, bails pivotally attached to the sides at the opposite ends near the top, and hand holds pivotally attached to each of the bails at their central portions.
4. I11 a canning apparatus, the combina tion of a boiler having a bottom and side p0r-' tions, pockets at the o posite ends thereof adjacent the top, posts isposed in said pockets and provided with a series of supporting recesses, a reticulated tray Within the boiler having bails pivotally connected at its opposite ends to adjustably engage the recesses of said posts, and hand holds pivotally connected to said bails at opposite sides of the post engaging portion thereof.
5. In a canning apparatus, the combination With a vessel having a bottom and side portions and rectangular pockets at each end adjacent to the top of the vessel, of posts each consisting of a fiat bar having a one half twist intermediate of its ends and notches along one'edge thereof each of said pockets having a post mounted therein.
