Specification of Letters Patent.

To all whom it may concern:
Be it known that I, SYLvEsTER G. LEWIS, a citizen of the United States, and a resident of St. Louis, Missouri, have invented certain new and useful Improvements in Evaporators, of which the following is a specification.
This invention relates to improvements in evaporators, and consists in the novel arrangement, construction and combination of parts as will be fully hereinafter described and claimed.
The object of my invention is to construct an evaporator with a plurality of separate compartments in which fruits are located and heated by steam coils.
A further object of my invention is to construct an evaporator with a plurality of compartments so arranged as to prevent the moisture from one compartment coming in contact with the other.
In the drawings'Figure 1 is a vertical, central, sectional view of my complete device. Fig. 2 is a vertical, cross sectional view taken on the line 22 of Fig. 1.
In the construction of my invention I provide a housing composed of a front wall 3, a rear wall 4, side walls 5 and 6, and top 7. The side wall 6 is provided with a plurality of doors 8 through which access to the interior of the housing may be had. In the housing I provide a horizontal partition 9 forming a boiler compartment 10 in which is placed a boiler 11 and through the wall 4 I provide an opening 12 through which the smoke stack 13 is passed providing suitable draft-to the boiler 11.
Between the horizontal partition 9 and the top 7 I provide a plurality of horizontal partitions 14. Three of the edges of each of the partitions 14 contacting with the walls of the housing, while the other edge projects a short distance from the wall 5 and forms a passage-way 15 through which the heat and moisture may pass upwardly.
Upon each of the partitions 14 is placed a coil of pipe 16, one ser es of pipe being con nected to the other, forming a complete circulation from the boiler through all of the various compartments; the steam being admitted from the boiler dome 17 into the pipe 18 which is connected to one end of the lowest coil, and the vapor of the steam is admitted again into the boiler through the pipe 19 connected to the highest coil pipe.
The compartment is preferably divided into two sections by means of a partition wall 20. The object of this is to permit the operator to enter either one of the compartments without disturbing the other.
The top 7 is constructed preferably of two sections the ends being open as indicated by the numeral 21 providing an air space through which air may circulate.
Upon the coils 16 are placed the pans containing the fruit to be evaporated, and as the moisture which has a tendency to rise, rises from the fruit the same passes toward the wall 5 and upwardly through the passage 15, thus preventing the moisture from one wall from coming in contact with the one above, in this manner the contents of each compartment is separately treated. The moisture which passes upwardly through the passage 15 finally passes out through the opening 22 formed in the top, and comes in contact with the under surface of the roof 23. The roof 23 is constructed to act as a condenser, and consists of two sections 24- arranged in gable form. ception of a slight portion of the apex as indicated by the numeral 26 through this space the air is permitted to circulate.
On the top of the gable I provide a pipe 27 which has a plurality of perforations 28 which act as nozzles through which a spray of running water is passed upon the top of the roof, and permitted to flow downwardly into the gutters 29 and from these the water may be conveyed to a tank for reuse if desired.
To the inner surface of each of the sections 24 of the roof I provide gutters 30 in which the condensation of the vapor is collected and delivered to any desired basin, and this condensation is used as a by product. In connection with the gutters 30 I provide upon the top 7 a pan 31 which may catch any and all drippings that may fall from overweight, and from this pan the collected c011- densation may be withdrawn in any desired manner.
This device has been preferably designed for the evaporation of bananas for the purpose of manufacturing a banana flour, and the reason for catching the condensed vapor is to utilize this condensation for the purpose of making a banana oil.

end passing through one of llllGWELllS and permitting fresh air to pass upwardly through the housing, and in the pipe I provide perforations, one located in each compartment so as to supply each of said compartments With a suflicient amount of fresh air. The control of the air may be regulated by a valve on the pipe.
I'do not desire'to limit myself to the precise construction of heating mechanism as these compartments may be heated by a blast of hot air instead of a coil of steam pipe.
Having fully described my invention, What I clailn is:
1. A deviceof the class described comprising a housing, partitions located in the housing forming separate compartments, a heating coil located in each of the compartments on Which the material to be evaporated is placed, said partitions and Wall of the housing forming ,a passage-Way on one side for the discharge of the vapors, a condenser located upon the housing, a pan located on the housing and a Water supplyfor cooling the 0011- denser, substantially as specified.
2. A device of the class described comprising a housing,a heating device located Within the housing, partitions located Within the housing above the heating. device, heating coils located Within each of the compartments, 3 and separately heating each compartment, a condenser located upon the housing to condense the vapors, and receptacle for catching the condensation, substantially as specified.
3. An evaporator comprising a rectangu- 3 lar housing, a boiler compartment located in said housing, a plurality of partitions located in said housing into Which the material to be evaporated is placed, a hollow Wall forming the top of said housing, heating coils located in each of the compartments and communicating With the boiler in the boiler compartment, a condenser located above the housing, and a pan located on top of the housing beneath the condenser, and an air pipe leading from the exterior of the housing to each of the several compartments, substantially as specified.
