TO ALL WHOM IT MAY CONCERN:
Be it known that I, ABRAM S. SWARTz,-of the city of Buffalo, county of Erie, and State of New York, (assignor to myself and Whitney A. Case,) have invented a new and improved Apparatus for Preparing Mash for Distilling and Brewing; and I do hereby declare that the following is a full and exact description thereof, reference being had to the accompanying drawings, making a part of this specification, in which' Figure I is a sectional elevation.

The nature of this invention relates- 1. To making an apparatus by which steam may be passed into the mash through continually-moving aper tures, for boiling the maslnnnd then cold air passed through the same apertures for coolingthe mash.
2. To the particular arrangement and combination of the several devices A represents a mash-tub of ordinary construction;

C represents a vertical hollow shaft which runs in a step, d, in the bottom'of the tub, and in a journal bearing, d, in the frame. To this shaft is connected a hollow rake-head, E, which has small openings .2 on opposite sides of the parts which extend from the shaft, so that steam or cold air will penetrate the mash in a direction opposite to that in which the head revolves. The form of the head is V-shaped, and at these openings is projected into a slight rim oruflange above and below the openings, sothat as the head revolves a partial vacuum will be formed directly forward, of the openings, which will facilitate the escape of the steam or col air into the mash.
The upper part of the rake is represented at E (this is not made hollow,) and the rake blades at E".
F represents a cold-air tube which connects with the hellow shaft, as shown atf, and with the receiver G, which receiver is also connectcdwith the air-pump II by means of the tubcs or pipes I.
The piston h of the air-pump is connected by means of the connecting-rod J to the crank K, and thence to the driving-shaft L, so that cold air may be forced from the pump into the receiver; thence through the pipe F and hollow shaft 0 into and through the hollow perforated head into the mash.
M represents a cooling tank, in which the receiver stands. This, and also the receiver, are made about six feet in height. It is to be filled about one-third full of ice-cold water, or water and ice, so that the receiver stands in the water. The bottom of the receiver is perforated, so that the water will enter it when the air pressure is removed or lessened. Now, when the air-pump is worked it will force the air into the receiver above the water, and press the water down in the receiver and up in the cooler and around the outside of the receiver, so that the receiver will be nearly immersed in the cold water, as shown in Fig. II. This arrangement will cool the air before it is passed into themash.
M is a steam pipe, which is connected with the cold-air pipe F, so that steam may be let in through this pipe for boiling the mash. When steam'is used for boiling the'mash the cock m will be opened and the cock m closed, and vice versa when cold-air is used for cooling.
N represents an air pipe, which. connects with the receiver and opens through perforations it into the mash-tub.
O is a steam pipe connected therewith. These may sometimes he used when the hollow shaft and revolving perforated head are not used.
Prepresents a large bevel wheel and Q a small bevel-wheel placed on the hollow shaft 0, and R and S difi'cront sizedhevel-whcels placed loosely on the driving-shaft L, which mesh with the bevel-wheels P and for the purpose of driving the hollow shaftand perforated rake-head at a greater or less speed, as may be required.
Clutches and U are hung in the shifting-frame V, which by the proper movements thereof will cause either ofthe wheels R or S to gear with its mate on the hollow shaft and drive that shaft, or both may be thrown out of gear, as may be desired, and by this arrangement the shaft may be run at a greater or less speed, as may be desired.

From this description it will be readily seen that the per-foretell rake-head which revolves in the mash may be driven at any required speed, and that steam may be passed through the revolving perforated rake-head and thoroughly permeate the [111E111 for boiling or cooking it, and that cold air may in the same manner be passed in for quickly coolihg it.
What I claim as my invention, and desire to secure by Letters Patent, is-
lv The combination of the air-pump H and oonrlueting pipe F with the hollow shaft C and perforated rakehead. E, for the purposes and substantially as described.
2. The combination of the receiver G and cooler M with the conducting pipe F, hollow shaft C, perforated rake-head E, and ztiepump H, for the purposes and substantially as set forth.
In an apparatus for preparing mesh for brewing I claim the combination and arrangement of the receiver G, steam pipe 0, and steam and air pipe N, for the purposes and substantially asidescrihotl.
4. The shifting frame, in combination with the clutches T and U and herelqvhlmls R and S, for the purpose and substantially as described.
