Be it known that I, TILLMON PERRY Ricks, a citizen of the United States, residing at San Marcos, in the county of Hays and Stateof Texas, have invented certain new and useful Improvements in Meat-Cutters; and I do declare the following to be a full, clear, and exact description of the invention, such as will enable others skilled in the art to which it appertaius to make and use the same, reference being had to the accompanying drawings, and to the letters of reference marked thereon, which form a part of this specification.
My invention has relation to meat-cutters; and it consists in the novel construction and arrangement of its several parts hereinafter descriloed.l
In the accompanying drawings, Figure l is ,a top plan View of my invention with the lidV thrown back. Fig. 2 isfa longitudinal sectional view of Fig. l, out on the line. Fig. 3 is an enlargement of a part of Fig. 2. Fig. a is a detail view showing the knives O, cogwheel c, bearin g c, and cap c. Fig. 5 is a cross section of a part of the invention in order to show the groove in the track b and one of the wheels Z3.
My invention is a meat-cutter for making beefsteak and other meats tender, which is done by running the meatback and forth under the knives and cutting the meat bothv ways if need be. In the invention shown there is but one cog-wheel and one cog-bar; but I pnt a cog-wheel on each end of the axle and a cogbar on each side of the meat-board.
My invention is described as follows: The frame consists of two parallel side bars a a and end hars a a and has on each side a grooved rail ZJ 'h and on each end rubber (or other suitable material) bumpers b b. These rails and bumpers are on the inside of the frame. The side rails a are provided with iianges a2 to keep the meat-board in place. On either side of said frame is erected a bearing c, Fig. 5, for the end of the axle CZ, which carry the cog-wheel e and knives f. Said axle is held in place by the cap c', which is secured by proper hinges and hasps. The cogwheel c is rigidly secured on one end of the axle CZ, and I secure a similar cog-wheel on the other end of the axle. The knives f are circular and are also rigidly secured on the said axle CZ. The cleaners g are bent downward at their center and pass under lthe said axle CZ and have a part cut away from each edge, so that when the knives are put between them they exactly iit between the said cleaners, and thus the knives up to their very edges are closely embraced by the said cleaners, soV
that no meat can possibly pass up and follow the knives around. The axle CZ, with its wheels and knives, can be easily taken out and cleaned by unclasping the caps c. (See Fig.) One end of the cleanersgis secured to a bar Zi', that is as long as the machine is wide, and has near each end a hook-catch h3, that enters a corresponding opening in the bar h2. The other ends of said cleaners are secured to a bar i', which bar is provided with a proper hasp g2, which passes over a hook or staple j to keep that end of the cleaners down. Said beams ZL and c" respectively rest on cross-bars h2 and i2, and said cross-bars h2 and Z2 rest on arms i3, (see Fig. 2,) the lower ends of which are secured to the sides of the standard c.
YVhen I wish to remove the cleaners to clean them, l turn back the cover Zt and take out the axle CZ, with its attachments. Then I release the haspf, turn back the cleaners, and Withdraw the curved pins Zz. Thus the cleaners are entirely separated from the machine.
Immediately under the knives is the moving meat-board Z, havingthe side flanges Z to keep the meat from rubbing against the flanges a2. Said board is also provided with a cog-bar Z2, the cogs of which mesh with the cogs on the wheel e. The opposite side of said board is provided with a cog-bar similar to bar Z2. On the un'der side of said meatboard are journaled four wheels Z3, which run on the tracks b and carry said board. On the under side and near each end of said board are secured stops Z4, which strike against the bumpers ZJ. The axle isprovided with the crank-handle m or otherproper means for revolving it. Y'
My machine is operated as follows: The cleaners are put in place and the Coverlet down. The meat is then put on the board Z. The knives are then revolved back and forth, which operation carries the meat backand forth under them until it is lacerated suiliciently in one direction, and then turned and ICO lacerated crosswise, and, if need be, turned over and lacerated on the other side. When I wish torelnove the meat-board I run it to one end of the frame, raise the end a little with one hand, and give the' crank m a little turn, and it comes out. So my invention is arranged that every piece may be easily and readily taken out to be cleaned or repaired, and my cleaners are so constructed that they embrace not only the sides of the knives, but the edges, and thus not only keep them clean, but have atendency to keep them sharpened.
Having described my invention, what I claim as new, and desire to secure by Letters The combination ot' the frame having `the inner tracks b b and the bumpers b b', the meat-board Z, having the side flanges Z,cog bars Z2, wheels Z3, and stops Z4, cleaners g,
adapted to closely embrace the knives fand having one end secured to the beam t" and the other to the beam h', curved hooks h3, secured to the lower face of said beam h and adapted to enter perforations in the beam h2, axle d, working in the bearings @cog-wheels e, rigidly secured to said axle, circular knives f, adapted to [it in the openings between the cleaners g, cover 7c, hinged to the beam h', and crank m on one end of the axle d, substantially as shown and described, and for the purposes set forth.
