To all whom it may concern:
lie it known that I, Ennns'r H. Runnersrnu, a citizen of the United States, and resident of Evanston, in the county of Cook and State of Illinois, have invented certain new and useful Improvement in Culinary Devices, of which the following is a specification.
ll'ly invention relates to culinary devices and particularly to a turner for cakes, etc.
i am aware that many forms of devices having an object in view similar to that contemplated by me have been proposed, the present dorice being a material improvement tl'lQlLOVCl". In my device I have provided for extreme sin'iplicity and ease in tion. ()ne of the requisites in the construction of a levice or this character is that the movement necessary to be made by the operator in order to actuate the cover plate shall be comparatively slight. To this end the cover plate is hinged at the base of the plate, the base portion of the plate being angular and being arranged tor actuation by a longitudinally sliding member which terminates at the handle or grip of the device. By this arrangement also the cover member may be arranged to lie substantially parallel to the longitudinal axis of the device, thus enabling the discharge of the article held between the plates more nearly to the surface of the pan or cooking utensil. This is secured by deflecting the bottom plate and causing the same to lie at an angle t the axis of the device.

In the di wings it will be seen that the device comprises a shank 10, to which a lower blade 11, is secured in any approved Specification of Letters Patent.

manner. A handle or grip 12, is fixed on I the opposite end of the shank. A cover or retaining plate is pivoted at 13, to the lower blade at the rear margin thereof, the cover plate comprising a main portion 14;, a slightly upturned outer extremity 15, and an angularly bent inner portion 16, the margin of which is held by the pivot 13. The cover plate is oscillated on its pivot by means of a longitudinally reciprocable rod 17, the upturn ed end 18, of which terminates in an angularly bent hook 19, engaging in an aperture near the upper edge of the bent portion 16, of the top plate. The bending of the end of the rod in the manner shown g novides a loose joint or connection and a longitudinal pull on the rod will serve to rock the plate on its pivot. At a point intermediate of its ends the rod is coiled to surround the stem 10. at 20. It then eX- tonds rearwardly in line with the forward portion and terminates in an upturned end 21, located adjacent to the forward end of the handle 12. in order to guide the rear end oi the rod an eye 22, is fixed in the bandle or held by the terrule In order normally to hold the blade in its lowermostposition I .vrovide a spring 24;, on the shank 10, the forward end of the spring bearing against a washer 25, which engages the coil 20.
in operation the user grasps the handle, he thumb lying above the portion 21, of lo rod. A very slight movement or the thumb will serve to retract the rod against the force ot the spring and oscillate the blade on its pivot.

1. in a culinary device, the combination of a shank, a flat angularly disposed blade iixed thereto, a cover plate angularly disposed with relation to the blade and provided with a sharply bent portion, means for pivoting one ed ge oi the bent portion to the blade, and means engaging the cover plate at the bend for oscillating said cover plate.
2. In a culinary device, the combination of a shank, a fiat, angularly disposed blade fixed thereto, a cover plate angularly disposed vvith relation to the blade and provided With a sharply bent portion, means for pivoting one edge of the bent portion to the blade, and a longitudinally movable 1 rod connected to the cover plate at the bend for oscillating said cover plate.
