A method for producing fish roe analogue provides addition of gelling agent water solution mixed with flavoring agents and colorants into cooled forming medium with next granule washing and cooking. According to the method capsules as water solution of internal content contain 0.1-10.0 % solution of thermotropic gelling agent of polysaccharide or protein nature in 0.2-2.0 % solution of water-soluble calcium salt with temperature 26-65 °C, and as a forming medium contain 0.5-3.0 % water solution of sodium alginate with temperature 0-25 °C.
