Abstract

A method for making bacterial sour-milk products concentrate provides for preparation of food solution based on milk whey with addition of growth-substances, addition of inoculum containing thermophilic streptococcus, cultivation, cell separation, its mixing with blocking medium, freezing and drying. Milk whey is preliminary hydrolized with enzyme preparation, and as inoculum is used the Streptosan ferment and strain of the thermophilic streptococcus VKPM V-4463, in ratio of 10 : 1.
