Abstract
A method for producing dietetic wheat bred includes kneading dough from flour, water, salt, yeast and product from Jerusalem artichoke, dough fermentation, handling thereof, proofing and baking of dough pieces. Concentrate from Jerusalem artichoke is used as a Jerusalem artichoke product. Before dough kneading a semi-finished product is prepared by preliminary mixing water and part of flour. The invention relates to food industry, methods for bred production.
