Abstract

COLLAGEN-CONTAINING FERMENTED MILK AND METHOD FOR PRODUCING SAME 5 The problem is to provide a method for producing a fermented milk that suppresses generation of an unpleasant flavor, said fermented milk containing collagen at a high concentration. By adding a prescribed antioxidant to a milk-containing material mixture which contains collagen at a high concentration, a fermented milk is produced 10 in which generation of an unpleasant flavor is suppressed, and increase of an unpleasant flavor during storage, in particular, chilling storage, is suppressed.
