Abstract

For handling of food in large kitchens, the material is arranged on a sheet, which is inserted into a cassette (1) with standardised dimensions. The cassette sheet supports (15) are spaced so that an air flow is maintained in at least one of the treatment stages, e.g. a convection oven (2) so that, independent of the extent to which the cassette is filled, all products receive equal treatment. - After the products have been apportioned for serving, the cassette is returned to the commencement point where it can be collapsed.(1)
