Abstract

Przedmiot zgłoszenia stanowi sposób odzyskiwania mięsa ryb ze szkieletów rybnych po odfiletowaniu, w którym szkielety rybne najpierw poddaje się krótkotrwałej obróbce termicznej, a następnie natryskuje płynem pod ciśnieniem, charakteryzujący się tym, że płyn pod ciśnieniem stanowi przegrzana para wodna. Przedmiotem zgłoszenia jest ponadto urządzenie do odzyskiwania mięsa ryb ze szkieletów rybnych po odfiletowaniu, zawierające poziomy pręt do nasadzania szkieletu rybnego osadzony przesuwnie w pionowych prowadnicach, przy czym pręt znajduje się w obudowie. Urządzenie charakteryzuje się tym, że po obu stronach pręta (1) zawiera dysze (3) rozmieszczone równolegle do pręta (1), skierowane pod ukosem i zasilane przegrzaną parą wodną i ponadto dysze (3) są w obudowie (5).The subject of the application is a method of recovering fish meat from fish skeletons after filleting, in which the fish skeletons are first subjected to short-term thermal treatment and then sprayed with a pressurized fluid, characterized by the fact that the pressurized fluid is superheated steam. The subject of the application is also a device for recovering fish meat from fish skeletons after filleting, comprising a horizontal rod for attaching the fish skeleton slidably mounted in vertical guides, with the rod located in the housing. The device is characterized by the fact that on both sides of the rod (1) it contains nozzles (3) arranged parallel to the rod (1), directed at an angle and fed with superheated steam, and moreover, the nozzles (3) are in the housing (5).
