Abstract

Den foreliggende oppfinnelse frembringer en fremgangsmåte for kontinuerlig fremstilling av osteprodukter, i hvilken a) en vesentlig homogen flytende produktstrøm blir produsert fra de startmaterialer som er nødvendige for å produsere ostepro- duktet, b) den flytende produktstrøm blir, om ønsket, utsatt for varmebehandling, c) produktstrømmen blir, om ønsket, avkjølt til en temperatur som passer for setting av viskosi- teten, d) viskositeten av den flytende produktstrøm blir satt til en ønsket verdi ved å dirigere hele eller en del av pro- duktstrømmen gjennom et lukket sirkulasjonssystem, i det minste ved begynnelsen av prosessen, og under prosessen å utsette den for en skjæringskraft, og e) produktstrømmen blir avledet fra sirkulasjonssystemet, og blir etter eventuelt videre behandling og/eller midlertidig oppbevaring, fjernet som et ferdig produkt.
