Abstract

An automatic installation for the cutting out of the cloaca of poultry, has a rotary, driven cutter, with a hollow cylindrical knife, from which a centering pin extends into the anus of the bird. The knife is supported in bearings at the end of a hollow, rotating but axially immovable, driving shaft enclosing the centering pin. In a position of rest the knife releases the bottom end of the centering pin to which it is coupled by a carrier peg projecting from the pin through a spiral slot in the knife. When the driving shaft rotates, the knife shoots axially from the position of rest over the end of the centering pin pushed into the anus, and cuts out the cloaca. During cutting out, the centering pin is driven in the opposite direction to that of the knife. The end of the centering pin to be inserted into the anus has a spiral rib. This projects sideways and increases in diameter upwards; its largest diameter being smaller than the internal dia. of the knife. The rotation speed of the knife is greater than that of the centering pin. The cutting out machine has a revolving turret with a conveyor on the hooks of which the carcasses are hung by their ankles. There is >=1 cutter secured to a slide block moving synchronously with the conveyor up and down in the direction of the bird. The controls are arranged so that as the slide descends, the centering pin penetrating the anus is already in motion. The knife is then rotated for the cutting out operation and both details are stopped as the slide is retracted. The cloaca, gripped between rib and knife together with the rectum is withdrawn from the bird and finally stripped off the pin. The knife makes a clean, relatively small hole without risk of damage to the entrails. No vacuum system is used the cut hole does not cause loss of carcass weight and its size facilitates subsequent operations. The cloaca cannot turn with the knife and is drawn out of the bird before being released. It cannot fall back but hangs instead on the rectum so that inspection is simplified.
