Abstract

A method transfers heat indirectly to fats or similar prods. in order to solidify them or heat them. The hot liq. prod. is fed to a narrow space, filled with liq., between two surfaces which move relative to one another. The prod. is fed by a pump or a screw. >=1 of the surface is heated or cooled. The temp. and press. in the space keep the prod. liq. As it leaves the space and enters a form at normal pressure it solidifies. Method is used to cool and solidify cocoa butter or paraffin or to sterilise liqs. contg. solids. If the prods. are allowed to solidify in forms several hours are needed for cooling. The method greatly reduces the cooling time.
