Abstract

Meat is packaged in pieces of a reasonable size (ave. minimum wt. of the pieces = 10 g) by placing the meat in a flexible cover consisting of material which is inextensible in the following work phase, placing the cover contg. the meat in a can or another rigid container and sealing and heating the container. The inner flexible cover greatly reduces the cooking loss of the meat, and ensures that the flavour is retained. The rigid container consists of a mould from which the meat is removed before it is cooked. The can is of the type known as "flatham" or "pullman ham" and is sealed under vacuum. The flexible cover shrinks, pref. by 35%, when the container is heated. The cover pref. consists of a drawn polyethylene terephthalate film.
