Abstract
The dough paste is cooked (boiled) long enough to cook it completely and need only be re-wetted in hot water for preparation for the table. Time required depends on wall thickness of the product and added spices etc. Wall thickness should be between 0.46 and 0.63 mm, and more especially 0.50-0.56 mm, though thickness below 0.30 mm is not recommended. The dough paste product is cooked in steam and kept moist throughout the process, by hot spray or intermittent sprays. The shaped products, tubes, noodles etc. are dried continuously or in batches, to required moisture, at a temperature maximum 115 degrees C.
