Abstract
The present invention relates to a formulation and a method for producing trans--free palm-based liquid coconut milk substitute, wherein said formulation comprises ingredients which include palm-based oil, food additives, stabilizer, permitted flavour, a first emulsifier, preservative, a second emulsifier and water. Said method involves several steps including mixing, two-stage homogenization and pasteurization. The food analysis compositions of the resulting palm-based liquid coconut milk substitute include: moisture, ash, protein, fat and carbohydrate. (Figure 1)
