A METHOD FOR THE PRODUCTION OF OIL FROM STONE-BEARING FRUITS WHICH C COMPRISES THE FOLLOWING STAGES:@- TREATMENT OF BUNCHES TO OBTAIN PROCESSABLE FRUIT@- SEPARATION OF THE STONES FROM THE FRUIT PULP@- PASSING THE PULP TO A PRESSING CYCLE @- PASSING THE STONES ONLY TO A SEPARATE PRESSING CYCLE@- CLARIFICATION OF THE OIL PHASE AND / OR AQUECUS PHASE BEFORE STORAGE, IF REQUIRED@AND A CORRESPONDING MACHINE FOR DESTONING STONE-BEARING FRUITS AND REMOVING THE SHELLS FROM THE KERNELS COMPRISING AT LEAST THREE COAXIAL MEMBERS EACH OF WHICH CAN BE CONTROLLED AT A DIFFERENT SPEED FROM THE OTHERS, COMPRISING A ROTATING DRUM (1,101) HAVING A PLURALITY OF OPENINGS (2,102), A SET OF INCLINED SCRAPER BLADES (9) AND A COAXIAL SCREW FEED (10), THE SUPPORTING STRUCTURE FOR THE SAID MEMBERS BEING PROVIDED WITH AN OUTLET OPENING (7) FOR THE PULP ADJACENT TO THE PERFORATED SURFACE OF THE SAID DRUMS AND AN OUTLET OPENING (8) FOR THE STONES AT THE AND OF THE DRUM OPPOSITE THE FEED END.@@(FIG.2)
