Abstract

La invencion se relaciona con una bebida lactea translucida y un metodo para su preparacion. La bebida se puede preparar: (a) al proporcionar un material inicial lacteo opaco que tiene un pH en el intervalo de 5.6-8.0, de manera preferible 5.6-7.0, y de manera mas preferible 5.7- 6.5; (b) al poner en contacto por lo menos una porcion del material inicial con un intercambiador cationico hasta que el porcentaje de transmision del material (cuando se separa del intercambiador) se incrementa en por lo menos 5%, preferiblemente por lo menos 25%, de manera mas preferible por lo menos 40%; (c) opcionalmente al mezclar la muestra lactea translucida con otra muestra lactea mientras se retiene el porcentaje de transmision en por lo menos 5%, preferiblemente por lo menos 25%, y de manera mas preferible por lo menos 40%. La bebida lactea se puede utilizar como la base para una bebida sin alcohol similar a una bebida lactea, la cual puede estar carbonatada.
