Abstract
Se describe un proceso para la preparacion de una fase mesomorfica pasteurizada o estéril de surfactante, que comprende los pasos secuenciales de: (a) la preparacion de una premezcla que comprende surfactantes y agua, a una temperatura por arriba de la temperatura de Krafft del surfactante, y por debajo de la temperatura de transicion laminar-cubica de la mezcla de surfactante-agua; (b) el calentamiento de la premezcla a una temperatura por arriba de la temperatura de transicion laminar-cubica de la mezcla de surfactante-agua; (c) el mantenimiento de la premezcla entre la temperatura de Krafft del surfactante y la temperatura de transicion laminar cubica de la mezcla de surfactante-agua, especialmente con la aplicacion de alto corte, por un tiempo suficiente para permitir que la mezcla alcance una fase laminar continua; y (d) el enfriamiento de la premezcla por debajo de la temperatura de Krafft de los surfactantes. Como una alternativa al tratamiento por corte, la premezcla puede ser mantenida a una temperatura por debajo de la temperatura de Krafft del surfactante, por al menos 0.1 segundo entre los pasos (b) y (c). La fase mesomorfica obtenida mediante este proceso se puede mezclar con ingredientes alimenticios adicionales para producir un producto alimenticio con bajo contenido de grasa.
