Abstract

Se describe una L-ramnosa isomerasa altamente segura, altamente activa y resistente al calor y un mutante sustituido por aminoácidos de la misma, un microorganismo que la produce, o un método para producir una aldosa o una cetosa, todos los cuales son capaces de ser usados en la industria alimentaria. L-ramnosa isomerasa, que puede ser obtenida a partir de un microorganismo perteneciente al género Erwinia, tiene una masa molecular de subunidad de 48 kDa medida por SDS-PAGE, y tiene las siguientes especificidades de sustrato (A) y (B). (A) Una actividad de isomerasa para reconocer y reaccionar con un grupo CHO de C1 y un grupo OH de C2 de una aldosa para convertir el grupo CHO de C1 en un grupo OH y el grupo OH de C2 en un grupo CO, alternativamente, para reconocer y reaccionar con un grupo OH de C1 y un grupo CO de C2 de una cetosa para convertir el grupo OH de C1 en un grupo CHO y el grupo CO de C2 en un grupo OH. (B) Una actividad para catalizar una reacción de isomerización entre L-ramnosa y L-ramnulosa, entre L-lixosa y L-xilulosa, entre L-manosa y L-fructosa, entre D-ribosa y D-ribulosa, entre L-talosa y L-tagatosa, y entre D-alosa y D-alulosa.
