Abstract
La presente invención se refiere a un ingrediente de proteína y un preparado de aceite de semillas de frutos de macauba, así como a un procedimiento para la producción. El preparado de proteína presenta un contenido de proteína mayor que 15% en masa, ventajoso mayor que 30% en masa, y un contenido de grasa menor que 60% en masa, ventajoso menor que 25% en masa. El ingrediente de proteína puede producirse con color brillante y buenas propiedades tecnofuncionales. Tiene propiedades sensoriales atractivas y con ello puede emplearse en forma versátil en alimentos, alimento para mascotas y también para cosmética.
