본 발명은 콩나물 재배용 원료 대두를 0.01~200ppm의 오존수로 1~5시간 수침처리함으로써 콩의 표면에 오염된 잔류농약의 80~100%까지 분해, 제거시킴으로서 위생적인 콩나물을 만들 수 있으며 오염 미생물을 대두 g당 2.5×107에서 1.5×103이하로 크게 감소시킴으로서 일체의 농약 및 비료의 사용없이 무공해 청정 콩나물 비린내를 없게 하고 색상과 광택을 양호하게 하며, 잔뿌리가 적은 양질의 콩나물을 얻을 수 있고, 농약등 일체의 처리없이 재배중 부패율이 현저하게 저하된다. 또한 콩나물 공장에서 발생하는 세척수가 크게 정화되어 환경산업상 유효하다.The present invention can make hygienic bean sprouts by decomposing and removing up to 80-100% of residual pesticides contaminated on the surface of soybean sprouts by soaking the raw soybean sprouts for 1-5 hours with 0.01-200ppm ozone water, and contaminating microorganisms.
