Abstract

본 발명은 열매체를 함유하지 않거나, 소량만을 함유하는 용기내의 고상식품을 살균함에 있어서, 이들이 열매체를 함유하지 않거나 소량만을 함유하므로 종래의 고온살균방법을 적용할 수 없기 때문에 새로운 고온살균을 하기 위한 방법으로서, 식품을 조리하여 용기에 넣고 수증기, 포화수증기, 과열수증기로 살균한 후 감압밀봉하고 냉각하여 제품화하는 살균방법에 관한 것이다.

Claims (3)

  1. 식품을 조리하여 용기에 넣고 수증기, 포화수증기, 과열수증기로 살균한 후 감압밀봉하고 냉각하여 제품화함을 특징으로 하는 가공식품의 살균방법.
  2. 제1항에 있어서, 용기가 함석, 알루미늄, 주석도금하지 않은 강판, 유리, 플라스틱임을 특징으로 하는 살균방법.
  3. 제1항에 있어서, 식품이 열매체인 시럽을 함유하지 않는 고상이어서 통상의 고온살균 방법으로는 살균하기 어려움을 특징으로 하는 식품.
