Claims (7)
- 덩어리의 형성이나 우유의 엉김 없이 끓는 우유에 직접 가해질 수 있으며 냉각시 저장 안정 겔로 응고할 수 있는 조성물을 제공하기 위해; 30-70 중량부 감미제, 0-25 중량부 녹말, 0.5-4 중량부 카라게난 검, 0.5-3 중량부 팩틴, 및 0.3-3중량부 식물종자 검, 미생물 검 및 셀룰로우즈 검으로 이루어진 군으로부터 선택된 다른 검을 혼합하는 것을 특징으로 하는 건조 식품 조성물의 제조방법.
- 제1항에 있어서, 다른 검이 크산탄 것인 검을 특징으로 하는 방법.
- 제1항에 있어서, 조성물이 하기 성분으로 이루어지는 것을 특징으로 하는 방법 : 50 중량부 감미제, 5.5 중량부 녹말, 2.2 중량부 카라게난 검, 1.1 중량부 팩틴, 및 0.5-1.0 중량부 크산탄 검.
- 제1항, 제2항 또는 제4항에 있어서, 녹말이 포스페이트 가교 결합 옥수수 녹말인 것을 특징으로 하는 방법.
- 제1항, 제2항 또는 제4항에 있어서, 감미제가 자당, 과당, 포도당, 콘 시럽, 수소화 콘 시럽, 사카린과 같은 인공 감미료나 이 감미제들의 혼합물로 이루어지는 것을 특징으로 하는 방법.
