Claims (10)
- 두유로부터 불쾌취를 제거하기 위한 글루코스 및 글루코스 옥시다제 함유 조성물.
- 두유로부터 불쾌취를 제거하기 위한 글루코스, 글루코스 옥시다제 및 카탈라제 함유 조성물.
- 원료 대두를 물중에 침지시키는 공정, 배수공정, 침지된 대두를 65℃ 내지 75℃에서 가열하거나, 또는 가열하지 않는 공정, 침지된 대두를 글루코스 및 글루코스 옥시다제의 첨가로 용존 산소가 실질적으로 감소되었거나 또는 제거된 물과 함께 마쇄하는 공정, 마쇄된 대두를 증기처리하거나 또는 끓이는 공정, 그리고 그 결과 생성된 물질을 여과하여 불쾌취가 없는 두유를 생산하는 공정으로 구성되는 두유의 제조방법.
- 제3항에 있어서, 마쇄공정을 글루코스, 글루코스 옥시다제 및 카탈라제의 첨가로 용존 산소가 실질적으로 감소되었거나 또는 제거된 물과 함께 행하는 방법.
- 두유로부터 불쾌취를 제거시키는 방법에 있어서, 침지된 대두를 글루코스 및 글루코스 옥시다제의 첨가에 의해 용존 산소가 실질적으로 감소되었거나 또는 제거된 물과 마쇄시키는 것으로 되는 방법.
- 제5항에 있어서, 침지된 대두를 글루코스, 글루코스 옥시다제 및 카탈라제의 첨가에 의해 용존 산소가 실질적으로 감소되었거나 또는 제거된 물과 함께 마쇄시키는 방법.
- 제1항에 있어서, 글루코스 및 글루코스 옥시다제의 상대량이 글루코스 옥시다제 1중량부(글루코스 옥시다제의 활성은 60유니트/mg으로 가정함)당 글루코스 100-300중량부인 조성물.
- 제2항에 있어서, 글루코스, 글루코스 옥시다제 및 카탈라제의 상대량이 글루코스 100-300중량부: 글루코스 옥시다제 1중량부(글루코스 옥시다제의 활성은 60유니트/mg으로 가정함) : 카탈라제 1중량부(카탈라제 효소의 활성은 250유니트/mg으로 가정함)인 조성물.
- 제3항에 있어서, 글루코스 및 글루코스 옥시다제의 상대량의 글루코스 옥시다제 1중량부(글루코스 옥시다제의 활성은 60유니트/mg으로 가정함)당 글루코스 100-300중량부인 방법.
- 제4또는 6항에 있어서, 글루코스, 글루코스 옥시다제 및 카탈라제의 상대량이 글루코스 100-300중량부: 글루코스 옥시다제 1중량부(글루코스 옥시다제의 활성은 60유니트/mg으로 가정함) : 카탈라제 1중량부(카탈라제의 활성은 250유니트/mg으로 가정함)인 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
