Description

건조밥의 제조 방법
본 발명은 맵쌀, 찹쌀등의 정백미를 공지방법으로 수세한 후 침지 취반하여 열풍 건조에 의해 건조밥을 제조함에 있어서 열량을 가해주는 것만으로 극히 단시간내에 취반미와 같은 식미, 식감을 갖는 미반으로 복원되는 성질 및 장기간 저장이 가능한 건조밥을 생산하는 제조방법에 관한 것이다. 최근 식생활의 간편화와 식품저장성 향상등의 면에서 각종 식품등의 인스턴트화가 성행되고 있는데 미반에 대해서도 예외는 아니어서 현재까지 이러한 배경하에 건조밥 제조방법에 관한 많은 연구가 진행되어 왔고 그 결과가 공개되어 왔으나 조리 방법, 품질, 보존성등의 점에서 난점이 많아 만족할 만 제품을 얻는데 까지 이르지 못하고 있는데 이에대한 가장 큰 이유로는 옛부터 미반을 주식으로 해온 한국인에게 있어서 미반의 품질에 대한 감각이 타식품 이상 뛰어난데다가 종래 방식에 의한 건조밥을 복원하여 얻어진 미반은 보통방식으로 취반된 미반과 비교하여 식미, 식감이 뚜렷하게 떨어지기 때문이며, 또한 건조법의 필수요건인 양호한 복원력과 저장성의 면에서 지금까지의 어떠한 사항도 이를 모두 만족시키지 못하였다. 본 발명은 위의 모든 사항을 해결함과 동시에 간단한 작업공정과 건조 시간으로 에너지가 절약되며 생산성이 높으며 다음과 같은 3개의 공정으로 구분된다.
제1공정.
정백미(찹쌀, 맵쌀)를 개량, 석발, 정선, 수세한 후 이를 0.1-1.5%의 인산염 용액에 45-70도씨에서 45-60분간 침지 후 직화 또는 과열수증기(상압 또는 가압 0.1-1.0kg/㎠)로 15-60 분간 취반한다.
이 공정은 취반이 균일하고 신속하게 이루어지며 이렇게 제조된 밥은 맛이 좋고 제2공정, 제3공정을 거치는 동안 노화가 일어나지 않으며 건조후 복원이 양호하게 된다.
제2공정.
상기 취반미를 천연 항산화제인 Dl-α-토코페롤 0.2-0.5%향신료의 일종인 로즈마리(Rose Marie)추출물 0.1-1.0%를 각각 또는 두가지를 동시에 HLB가 10-20의 유화제 0.1-1.0%와 함께 분산시킨 45-75도씨 수용액에 30-90분간 침지시킨다. 이 공정은 건조밥의 저장성을 놓게하여 주고 제3공정의 건조 공정중 제품의 팽화를 유도해 주어 건조제품의 복원이 양호하게 하여 준다.
제3공정.
상기 침지미를 수분리하여 열풍순환 건조방식으로 건조한다. 이때의 열풍의 온도는 제품상태에 따라서 초기 20-40분간은 100-170도씨로 건조하고 그 이후는 60-100도씨로 조정하여 건조한다.
[실시예1.]
정백미 1kg을 수세하고 50도씨의 온수에 침지한 후 충분히 물기를 제거하고 상압에서 45분간 증자하여 바로 0.1-0.5% 유화재 0.2-0.5%의 Dl-α-토코페롤 및 0.1-1.0%로 로즈마리 추출물을 함유시킨 침지용액에 50도씨를 유지하며 30분간 팽윤시킨 후 물기를 제거하고 초기 155도씨 ±5도씨. 후기 82도씨 ±2도씨의 열풍건조를 하여 850g의 건조밥을 얻었다.
이 건조밥 100g에 250ml의 열량을 가해1분간 방치한 후 열탕을 제거하고 밀폐한 상태에서 4분간 뜸을 들이는 것만으로 간단히 미반으로 복원되었으며, 더우기 보통방식으로 취반되어진 미반과 거의 식미, 식감의 차이를 느낄 수 없는 미반이 얻어졌다.
[실시예2.]
정백미 1kg을 수세하여 50도씨 0.3%의 인산염 용액에 침지한 후 충분히 물기를 제거하고 상압에서 100도씨에서 30분간 취반하여 바로 0.1-0.5%유화제 0.2-0.5%의 Dl-α-토코페롤 0.1-1.0%의 로즈마리 추출물을 함유시킨 침지용액에 50도씨를 유지하며 30분간 침지한 후 초기 150도씨 ±5도씨, 후기 82도씨 ±2도씨의 열풍건조하여 850g의 건조밥을 얻었다. 이 건조밥을 상시 실시예1과 같은 방식에 의해 같은 효과를 나타냈다.

  1. 공지의 방법으로 개량, 석발, 정선, 수세된 정백미를 40-70도씨의 0.1-1.5% 인산염 수용액에 45-60분간 침지한 다음 직화 또는 고열 수증기로 15-60분간 취반 후 Dl-α-토코페롤 0.1-1.0%와 로즈마리 추출물 0.1-1.0%중 적어도 하나와 HLB가 10-20의 유화제 0.1-1.0%로 된 분산액 45-90도씨에서 30-90분간 침지한 다음 초기 100-170도씨, 후기 60-100도씨에서 20-40분간씩 건조시킴을 특징으로 하는 건조밥의 제조방법.
