제1도는 정어리 냉동세육(실시예5)에 있어의 겐강도-가영온도-가열시간의 관계를 나타낸 그래프이며
제2도는 명태 냉동세육(실시예6)에 있어의 겔강도-가열온도-가열시간의 관계를 나타낸 그래프로서, 이들 도면에 있어 각각 곡선 A는 대조시험구의 20분간 가열, B는 본 발명 시험구의 20분간 가열, A'는 대조시험구의 120분간 가열, B'는 본 발명 시험구의 120분간 가열의 경우를 나타낸다.

Claims (4)

  1. 당 및/또는 당알콜과 락트알부민 및/또는 혈장을 탈수어육에 첨가하고 이긴후 동결함을 특징으로 하는 냉동 세육의 제조법.
  2. 제1항에 있어, 탈수어육에 난백 알부민을 더 첨가함을 특징으로 하는 냉동 세육의 제조법.
  3. 제1 또는 2항에 있어, 탈수어육에 폴리포스페이트 및/또는 식용 계면활성제를 보조물질로서 더 첨가함을 특징으로 하는 냉동세육의 제조법.
  4. 어육연제품의 제조에 있어 혈장을 고기반죽에 첨가함을 특징으로 하는 어육연제품의 품질개량법.
