Claims (1)
- 대맥의 우위량(優位量)으로 이루어진 전분계 기질을 준비하는 공정과 스트랩토미세스(屬)에 속하는 아미라아제 생산균의 호기배양(好氣培養)에 의해 생산되어, 전부계 기질을 사용했을 경우에 최적작용(最適作用) pH가 4.5-5.0, 분해한도 말토오스 환산 74% 이상 및 글루코오스 대 말토오스의 생성비 0.06이하의 효소활성을 나타내는 아미라아제와, 아스페르길루스속의 곰팡이가 생산하는 프로테아제를 상기 전분계기질에 작용시켜서 이것을 당화(糖化)시키는 공정을 포함하는 것을 특징으로 하는 전분계 기질의 외부 효소당화에 의한 맥주 양조용 맥즙의 제조법.
