Description
Claims (10)
- 농축액을 가열하여 고체화하는 농축액 고체화 단계;
고체화한 농축액을 분말로 생성하는 고체 농축액 분말 단계;
발포제를 분말로 생성하는 발포제 분말 단계;
고체 농축액 분말과 발포제 분말을 혼합하여 농축 발포정을 생성하는 농축 발포정 생성 단계; 및
농축 발포정을 소주에 투입하여 칵테일 소주를 생성하는 칵테일 소주 생성 단계를 포함하는 칵테일 소주 제조 방법.
- 제1항에 있어서, 상기 농축액 고체화 단계는,
70도 내지 90도에서 1시간, 50도 내지 70도에서 1시간, 30도 내지 50도에서 4시간 순으로 가열하며, 농축액이 전체 용량의 2/3로 줄때까지 가열한 후에 50도 내지 65도에서 2시간 내지 12시간 열풍 건조하여 고체화하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제1항에 있어서, 상기 농축액 고체화 단계는,
인삼, 더덕, 산삼, 홍삼, 복분자, 매실, 오가피, 솔잎, 마늘, 도라지, 천마, 구기자, 영지, 생강, 포도, 딸기, 사과, 오렌지, 자몽, 키위, 파인애플, 블루베리, 레몬, 석류, 유자, 복숭아, 감귤 중에서 하나 또는 그 이상을 선택하여 농축한 농축액을 가열하여 고체화하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제1항에 있어서, 상기 고체 농축액 분말 단계는,
고체화한 농축액을 분쇄하여 평균입자크기 200㎛ 내지 800㎛의 농축액 분말을 얻은 후에, 한 번 더 분쇄하여 평균입자크기 50㎛ 내지 200㎛의 고체 농축액 분말을 생성하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제1항에 있어서, 상기 발포제 분말 단계는,
발포제를 분쇄하여 평균입자크기 400㎛ 내지 1000㎛의 발포제 분말을 생성하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제1항에 있어서, 상기 농축 발포정 생성 단계는,
고체 농축액 분말과 발포제 분말을 혼합한 후에 압착하여 일정한 크기로 타정한 농축 발포정을 생성하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제6항에 있어서, 상기 농축 발포정 생성 단계는,
고체 농축액 분말과 발포제 분말을 혼합한 후에 5 내지 10중량%의 안정제를 투입하여 혼합하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제6항에 있어서, 상기 농축 발포정 생성 단계는,
고체 농축액 분말과 발포제 분말을 혼합한 후에 5 내지 10중량%의 첨가제를 투입하여 혼합하는 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제6항에 있어서, 상기 농축 발포정 생성 단계는,
50 내지 70중량%의 고체 농축액 분말과 20 내지 30중량%의 발포제 분말을 혼합하여 농축 발포정을 생성하는 한 것을 특징으로 하는 칵테일 소주 제조 방법.
- 제1항에 있어서, 상기 칵테일 소주 생성 단계는,
소주 350ml 내지 360ml 당 7.1g 내지 8.1g의 농축 발포정을 투입하여 칵테일 소주를 생성하는 칵테일 소주 생성하는 것을 특징으로 하는 칵테일 소주 제조 방법.
