- 천마를 전처리 및 분쇄하는 단계와, 배합 및 반죽하는 단계와,압연ㆍ증숙ㆍ유탕ㆍ냉각 및 포장하는 단계를 포함하는 것을 특징으로 하는 천마라면 제조방법
- 제 1항에 있어서, 천마의 전처리는 건천마를 100∼110℃에서 3∼5시간 동안 열처리하여 분쇄하거나 건천마를 열수 또는 스팀으로 쪄서 건조시킨 후 분쇄하는 것을 특징으로 하는 천마라면 제조방법
- 제 1항에 있어서, 전처리된 천마분말을 반죽에 적합하도록 350mesh 이하의 크기로 분쇄하는 것을 특징으로 하는 천마라면의 제조방법
