Claims (6)
- 식품 조각, 특히, 아몬드, 헤이즐넛, 페칸, 호두 뿐만 아니라 땅콩, 겨, 곡류, 커피, 코코아 등과 같은 유질 열매의 로스팅 및 표면 살균 방법에 있어서,습한 환경에서의 처리는 온도 > 100℃에서 실행되고, 로스팅 프로세스 동안에 로스팅 시스템에서 살균이 실행되며, 살균 단계 동안에 제품 표면 상의 온도는 상기 환경의 선택된 노점 온도의 몇도 아래에 유지되고, 살균이 1 내지 30 분 내에서 실행되며, 전진 또는 계속된 로스팅 중에, 식품의 표면 상의 응축수가 제거되고, 후자의 흡수율이 최소화되는 것을 특징으로 하는 로스팅 및 표면 살균 방법.
- 제 1 항에 있어서, 습한 환경에서, 바람직하게는 50℃ 및 99℃ 사이의 온도에서 처리가 실행되는 것을 특징으로 하는 로스팅 및 표면 살균 방법.
- 제 1 항에 있어서, 살균 단계에서 제품 표면의 온도가 바람직하게는 상기 환경의 선택된 노점 온도의 0℃ 내지 8℃ 아래에 놓이도록 선택되는 것을 특징으로 하는 로스팅 및 표면 살균 방법.
- 제 1 항 내지 제 3 항 중 어느 한 항에 있어서, 제품 차지는 준비 용기 내에 준비되고, 로스팅 존(1) 내에 도입되며, 공기는 통풍기(4)에 의해 흡인되고, 버너(5) 내의 가스에 의해 가열되며, 로스팅 존(1)의 중심으로 가져오게 되며, 로스 트될 재료의 표면 온도가 상기 살균 온도에 도달하자마자, 살균 단계가 초기화되는 것을 특징으로 하는 로스팅 및 표면 살균 방법.
- 제 4 항에 있어서, 살균 단계 동안에, 상기 로스팅 존(1)을 통한 공기 흐름의 볼륨은 감소되고, 열풍으로의 스팀 분사는 밸브(11) 및 스크린(12)을 통해 개시되며, 공기 및 스팀의 량은 스팀과 혼합된 열풍의 노점 온도가 로스트될 재료의 표면 온도의 대략 0 내지 8℃ 위에 있는 그런 사이즈인 것을 특징으로 하는 로스팅 및 표면 살균 방법.
- 제 4 항 및 제 5 항에 있어서, 살균 단계 중에, 제품 표면 온도는 선택된 공기 및 스팀 볼륨 흐름에 기초로 하여 노점 온도 일치하게 되는 것을 특징으로 하는 로스팅 및 표면 살균 방법.
