Claims (19)
- 녹차잎을 10℃미만의 물에서 추출하는 녹차 플레이버(flavor)의 제조방법.
- 제 1항에 의한 녹차 플레이버(flavor)의 추출에 있어서, 동시에 추출되는 카테킨류의 추출비율이 녹차 내의 총 카테킨류 양의 2~20중량%임을 특징으로 하는 녹차 플레이버(flavor)의 제조방법.
- 제 1항 또는 2항에 의한 녹차 플레이버(flavor)의 추출에 있어서, 동시에 추출되는 총 카테킨류 내의 몰식자산 에스테르의 함량이 32중량% 이하임을 특징으로 하는 녹차 플레이버(flavor)의 제조방법.
- 제 1항 내지 3항 중 어느 한 항에 의한 제조방법에 의해 얻어지는 녹차 플레이버(flavor).
- 제 4항의 녹차 플레이버(flavor)를 배합한 음료.
- 녹차잎을 10℃미만의 물에서 제 1 추출처리한 후, 50℃이상의 온수에서 제 2 추출처리하고, 제 2 추출액을 건조하는 것을 특징으로 하는 건조녹차 폴리페놀의 제조방법.
- 제 6항에 있어서, 비중합체 카테킨류의 45~65중량%가 카테킨류의 몰식자산 에스테르임을 특징으로 하는 건조녹차 폴리페놀의 제조방법.
- 제 6항 또는 7항에 있어서, 상기 건조방법은 동결건조인 것을 특징으로 하는 건조녹차 폴리페놀의 제조방법.
- 제 6항 내지 8항 중 어느 한 항에 의한 방법에 의해 얻어지는 건조녹차 폴리페놀을 배합한 음료.
- 제 6항 내지 8항 중 어느 한 항에 의한 방법에 의해 얻어지는 건조녹차 폴리페놀을 배합한 반발효차음료 또는 발효차음료.
- 하기 성분 (A) 및 (B)를 배합한 음료:(A) 녹차잎을 10℃미만의 물에서 추출한 후 추출 잔여물을 50℃이상의 온수에서 추출하여 얻어진 폴리페놀 용액;(B) 반발효차 추출액 또는 발효차 추출액.
- 제 11항에 있어서, 상기 음료에는 비중합체 카테킨류가 0.092~0.5중량%로 함유되는 것을 특징으로 하는 음료.
- 제 12항에 있어서, 비중합체 카테킨류의 45~65중량%가 카테킨류의 몰식자산 에스테르임을 특징으로 하는 음료.
- 제 11항 내지 13항 중 어느 한 항에 있어서, 상기 반발효차 추출액 또는 발효차 추출액이 우롱차 또는 홍차임을 특징으로 하는 음료.
- 녹차잎을 10℃미만의 물에서 추출(제 1 추출)하고, 제 1 추출의 추출 잔여물을 50℃이상의 온수에서 추출(제 2 추출)하며, 제 1 추출에서 얻은 추출액(a)과 제 2 추출에서 얻은 추출액(b)을 혼합한 후, 살균처리를 하는 녹차음료의 제조방법.
- 제 15항에 있어서, 상기 제 1 추출에서 얻은 추출액(a)과 제 2 추출에서 얻은 추출액(b)의 혼합중량비(a/b)는 4/1~1/6 임을 특징으로 하는 녹차음료의 제조방법.
