Abstract

- 건조 물질 함량 80 wt% 및 60℃의 온도에서 측정된, 1000 mPa.s 미만, 바람직하게는 800 mPa.s 미만의 점도를 갖는 최대 60 wt%, 바람직하게는 15 내지 60 wt%의 글루코스 시럽; 및
- 최대 60 wt%, 바람직하게는 15 내지 60 wt%의 수크로스,
상기 주조 화합물은 적어도 70 wt%의 건조 물질 함량을 포함한다.

Claims (21)
- 코어 성분을 포함하는 젤라틴 제품으로서, 상기 코어 성분은 젤라틴 겔에 의해 부분적으로 또는 완전히 둘러싸여지고,
상기 젤라틴 겔은 물에 용해된 하기 성분들을 함유하는 균질한 주조 화합물로부터 생성되며:
- 겔 크로마토그래피에 의해 결정된, 적어도 130 kDa의 평균 분자량을 갖는 3 내지 20 wt%의 젤라틴으로서, 100 kDa 초과의 분자량 분율의 비율이 적어도 35 wt%인, 상기 젤라틴;
- 건조 물질 함량 80 wt% 및 60℃의 온도에서 측정된, 1000 mPa.s 미만의 점도를 갖는 15 내지 60 wt%의 글루코스 시럽; 및
- 15 내지 60 wt%의 수크로스;
상기 주조 화합물은 적어도 70 wt%의 건조 물질 함량을 포함하는, 젤라틴 제품. - 제1항에 있어서, 상기 주조 화합물은 또한, 하나 이상의 향미제, 착색제 및/또는 산성화제를 함유하는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 젤라틴은 주조 화합물 내에 5 내지 12 wt%의 비율로 함유되는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 글루코스 시럽 및/또는 수크로스는 각각 주조 화합물 내에 20 내지 40 wt%의 비율로 함유되는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 글루코스 시럽은 50 이상의 덱스트로스 당량을 갖는, 젤라틴 제품.
- 제1항에 있어서, 상기 주조 화합물은 또한 하나 이상의 당 대체물을 최대 80 wt%의 비율로 함유하는, 젤라틴 제품.
- 제6항에 있어서, 상기 하나 이상의 당 대체물은 폴리덱스트로스, 수소화 글루코스 시럽, 및 저항성 덱스트린으로부터 선택되거나, 및/또는 상기 하나 이상의 하나 이상의 당 알코올은 소르비톨, 만니톨, 자일리톨, 에리스리톨, 및 글리세롤로부터 선택되는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 주조 화합물은 또한, 하나 이상의 추가 하이드로콜로이드를 함유하는, 젤라틴 제품.
- 제1항에 있어서, 상기 코어 성분은 고체-물질 혼합물로부터 제조된 성형체인, 젤라틴 제품.
- 제9항에 있어서, 상기 성형체는 젤라틴 제품이 시각적으로 인식될 수 있도록 특징적인 형상, 표면 구조 및/또는 색상을 갖는, 젤라틴 제품.
- 제1항에 있어서, 상기 코어 성분은 기본 성분으로서 하나 이상의 당, 당 대체물 및/또는 다당류를 포함하는, 젤라틴 제품.
- 제11항에 있어서, 상기 코어 성분의 하나 이상의 기본 성분은 글루코스, 프룩토스, 락토스, 수크로스, 소르비톨, 만니톨, 자일리톨, 에리스리톨, 전분, 변형된 전분, 셀룰로스, 변형된 셀룰로스 및 이들의 혼합물로부터 선택되는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 코어 성분은 또한, 하나 이상의 약제학적 활성 물질 및/또는 영양소를 포함하는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 코어 성분은 흡습성을 갖는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 젤라틴 제품은 80 wt% 초과의 건조 물질 함량 및/또는 0.75 미만의 수분 활성도(aw 값)를 갖는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 코어 성분은 젤라틴 제품의 총 질량의 2 내지 60%의 비율을 차지하는, 젤라틴 제품.
- 제1항 또는 제2항에 있어서, 상기 젤라틴 제품의 총 질량은 1 내지 10 g 범위인, 젤라틴 제품.
- 제1항에 따른 코어 성분을 포함하는 젤라틴 제품을 제조하는 방법으로서,
- 제1 양의 주조 화합물을 75℃ 이상의 온도에서 중공 몰드에 붓는 단계;
- 상기 주조 화합물을 냉각시키는 단계;
- 중공 몰드에 코어 성분을 배치하는 단계;
- 제2 양의 주조 화합물을 75℃ 이상의 온도에서 중공 몰드에 붓는 단계;
- 젤라틴 제품을 얻기 위해 중공 몰드의 주조 화합물을 25℃ 이하의 온도로 냉각시키는 단계; 및
- 중공 몰드로부터 젤라틴 제품을 제거하는 단계;
를 포함하는, 방법. - 제18항에 있어서, 상기 중공 몰드는 고형 중공 몰드인, 방법.
- 제18항 또는 제19항에 있어서, 상기 주조 화합물은 60분 미만의 시간 내에 중공 몰드에서 냉각되는, 방법.
- 제18항 또는 제19항에 있어서, 상기 주조 화합물은 중공 몰드의 능동 냉각에 의해 중공 몰드에서 냉각되는, 방법.
