Claims (7)
- 쇼트한(short) 조직감의 캬라멜로서,
고분자량 다당류 및 적어도 하나의 단당류를 조합한 바이모달 탄수화물 성분을 함유하고,
상기 고분자량 다당류는 말토덱스트린, 분지형 말토덱스트린, 난소화성 덱스트린, 말토올리고당 및 저항성 덱스트린으로 이루어진 군에서 선택되고,
상기 캬라멜은 총 탄수화물 조성의 25 중량%(건조도(dryness)로 표시됨) 미만의 DP2(2당류) 및 캬라멜의 총 중량에 대해 1 중량% 내지 15 중량%의 지방 함량을 포함하고,
상기 단당류는 D-사이코스, 프룩토스, 또는 이들의 조합인 것을 특징으로 하는, 쇼트한 조직감의 캬라멜. - 제1항에 있어서, 상기 단당류는 D-사이코스인 것을 특징으로 하는, 쇼트한 조직감의 캬라멜.
- 제1항 또는 제2항에 있어서, 상기 고분자량 다당류는 20 중량% 미만의 DP2 및 DP3(2당류 + 3당류) 및 2500 Da 내지 6000 Da 범위의 분자량(MW)을 갖는 것을 특징으로 하는 쇼트한 조직감의 캬라멜.
- 제1항 또는 제2항에 있어서, 상기 단당류는 총 탄수화물 조성의 30 중량% 내지 70 중량%(건조도로 표시됨) 범위로 존재함을 특징으로 하는 쇼트한 조직감의 캬라멜.
- 제1항 또는 제2항에 있어서, 상기 단당류는 총 탄수화물 조성의 45 중량% 내지 55 중량%(건조도로 표시됨) 범위로 존재함을 특징으로 하는 쇼트한 조직감의 캬라멜.
- 제1항 또는 제2항에 있어서, 상기 고분자량 다당류는 분지형 말토덱스트린인 것을 특징으로 하는 쇼트한 조직감의 캬라멜.
