사양 벌꿀(홍천양봉영농조합법인)을 정제수에 용해한 다음 100 mesh 필터로 1차 여과한 다음 20℃에서 냉각한다. 1차 필터는 채굴한 벌꿀에는 밀납찌거기와 비교적 큰 입자를 제거하는 것이다. 냉각한 벌꿀 추출물을 10 micro 필터로 2차 여과한 다음 저장한다. 1차 여과 후 냉각을 통해 불순물을 부유하게 한 다음 1차 여과보다 더 촘촘한 필터를 이용하여 저장한다. 규조토 여과기를 이용하여 정밀여과하여 불순물을 모두 제거한다. 규조토 여과에서는 꿀벌 관리를 위해 사용된 항생제와 같은 유해 화학성분, 벌꿀 결정성분, 유해 색소, 잔류 농약을 통하여 꿀에 포함된 모든 분술물을 제거할 수 있다. 벌꿀을 포함하는 조성물의 당도는 당도계(Refracto meter. RX 5000α, Ata- go, Japan)를 이용하여 시료를 당도계의 렌즈에 넓게 펼쳐 채운 후 측정하였으며, °Brix %로 표시하였다. 벌꿀을 정제수에 용해하여 100 mesh 필터로 1차 여과한 다음 20℃에서 냉각하는 단계;
냉각된 벌꿀 여과액을 10 micro 필터로 2차 여과하여 저장하는 단계;
저장된 벌꿀 여과액을 규조토 여과기를 이용하여 정밀 여과하는 단계;
정밀 여과된 75 내지 85 brix 벌꿀에 대추엑기스, 스테비아, 카라멜색소, 허니향, 구연산 및 정제수를 혼합하여 용해한 다음 5 micro 필터로 3차 여과하고 103℃ 내지 107℃에서 살균하는 단계; 및
살균된 여과액을 1 micro 내열 필터로 4차 여과하여 25℃ 내지 65℃에서 냉각하는 단계를 포함하는 벌꿀을 포함하는 조성물을 제조하는 방법.
