도 2는 본 발명의 일 실시예에 따른 백미 제조 방법의 건조 단계와 수분 조절 단계에 의해 건조된 벼의 단면을 도시한 단면도이다.

Claims (8)
- 벼를 미리 설정된 제1 온도에서 미리 설정된 제1 시간 동안 건조시키는 건조 단계;
상기 벼의 수분 함량이 미리 설정된 제1 수분 함량 내에 포함되도록 상기 벼를 미리 설정된 제2 시간 동안 건조시키는 수분 조절 단계;
상기 벼로부터 분리된 현미의 도정 분도와 쌀눈 잔존량이 각각 미리 설정된 제1 분도와 미리 설정된 제1 쌀눈 잔존량에 포함되도록 도정 압력과 도정량 중 하나 이상을 조절하여 상기 현미를 도정하는 도정 단계 및
상기 도정된 현미의 도정 분도와 쌀눈 잔존량이 각각 미리 설정된 제2 분도와 미리 설정된 제2 쌀눈 잔존량에 포함되도록 연미 압력을 조절하여 상기 도정된 현미를 연미하는 연미 단계를 포함하며,
상기 도정 단계는,
상기 도정 압력과 상기 도정량을 각각 미리 설정된 도정 압력의 100%와 미리 설정된 도정량의 80% 내지 90%로 조절하여 상기 벼로부터 분리된 현미를 도정하는 제1 도정 단계;
상기 도정 압력과 상기 도정량을 각각 미리 설정된 도정 압력의 40% 내지 50%와 미리 설정된 도정량의 100%로 조절하여 상기 제1 도정 단계에서 도정된 현미를 도정하는 제2 도정 단계;
상기 도정 압력과 상기 도정량을 각각 미리 설정된 도정 압력의 40% 내지 50%와 미리 설정된 도정량의 100%로 조절하여 상기 제2 도정 단계에서 도정된 현미를 도정하는 제3 도정 단계; 및
상기 도정 압력과 상기 도정량을 각각 미리 설정된 도정 압력의 10% 내지 20%와 미리 설정된 도정량의 100%로 조절하여 상기 제3 도정 단계에서 도정된 현미를 도정하는 제4 도정 단계;를 포함하고,
상기 미리 설정된 6.5분도 내지 7.5분도에 해당하는 제1 분도와, 상기 미리 설정된 90% 이상에 해당하는 제1 쌀눈 잔존량을 가지도록 상기 현미를 도정하기 위하여 상기 제1 도정 단계 내지 상기 제4 도정 단계 별로 도정 압력과 도정량을 설정, 쌀눈의 손상을 최소화하는 것을 특징으로 하는 백미 제조 방법.
