Abstract
본 발명에 따른 선도유지를 위한 절단식육의 포장방법은 선도유지를 위한 절단식육의 포장방법에 있어서, (a) 냉장된 절단 식육의 표면에 한천 또는 젤라틴 또는 셀룰로오스, 녹말, 단백질 중 어느 하나 또는 하나 이상을 조성하여 된 조성물로 이루어진 천연 고분자화합물을 도포하여 0.01~0.2mm의 두께를 갖는 코팅막 형성단계; (b) 상기 코팅막이 형성된 절단식육을 포장하는 포장단계로 구성된다.
이와 같이 구성되는 본 발명에 따른 선도유지를 위한 절단식육의 포장방법은 절단된 식육의 표면에 한천, 젤라틴, 알긴산, 녹말, 기타의 다당류, 전분, 셀룰로오스 등의 천연 고분자화합물로 도포하여 코팅막을 형성시키는 간소한 공정 개선을 통해 식육 표면의 세포막을 외부로부터 차단하여 염기질소의 생성을 낮춤과 아울러 미생물 번식에 따른 변패를 억제할 수 있는 이점이 있다.
또한, 천연 고분자화합물이 식육 표면의 세포막을 차단시킴으로써 신선도 유지가 가능하고, 갈변 현상을 억제할 수 있으므로, 관능적인 요소를 중시하는 식육 제품에 있어 우수한 외관과 맛을 보장할 수 있으므로 상품성을 높일 수 있는 유용한 효과가 기대된다.
또한, 소비자의 선호도가 높은 상태로 유통 및 전시될 수 있으므로 제품에 대한 소비자의 만족도를 더욱 높일 수 있는 효과가 있다.

Claims (5)
- (a) 냉장된 절단 식육의 표면에 한천 또는 젤라틴 또는 셀룰로오스, 녹말, 단백질 중 어느 하나 또는 하나 이상을 조성하여 된 조성물로 이루어진 천연 고분자화합물을 도포하여 0.01~0.2mm의 두께를 갖는 코팅막 형성단계와;
(b) 상기 코팅막이 형성된 절단식육을 포장하는 포장단계를 포함하는 선도유지를 위한 절단식육의 포장방법에 있어서,
상기 코팅막 형성단계 이전에, 상기 냉장된 절단 식육의 표면에 산소수를 도포하고, 이를 -10~-80℃에서 1~10초간 동결시켜 산소수 결빙막을 형성시키는 급속동결단계;를 더 포함하여 구성되는 것을 특징으로 하는 선도유지를 위한 절단식육의 포장방법. - 제 1항에 있어서, 상기 코팅막 형성단계에서,
상기 천연 고분자화합물은 100~300메시의 분말을 도포하여 형성되거나, 또는 분말로 된 천연 고분자화합물과 0~8℃ 의 산소수를 100:10~50의 중량비로 혼합하여 된 액상 조성물을 도포하여 형성되는 것을 특징으로 하는 선도유지를 위한 절단식육의 포장방법. - 삭제
- 제 1항에 있어서, 상기 포장단계에서,
상기 코팅된 절단식육을 포장지에 담은 뒤 이산화탄소를 주입하여 밀봉시키는 단계;를 더 포함하여 구성되는 것을 특징으로 하는 선도유지를 위한 절단식육의 포장방법. - 제 1항에 있어서, 상기 포장단계에서,
탄산가스와 산소가스의 부피비가 70% ~ 95% : 5 ~ 30%가 되도록 혼합하여 된 혼합가스 제조단계와;
상기 절단식육을 포장지에 담은 뒤 상기 혼합가스를 주입하여 밀봉시키는 단계;
로 이루어진 것을 특징으로 하는 선도유지를 위한 절단식육의 포장방법.
