- 리놀레산계 식물성 유지, 팜올레인유 및 에스테르교환유를 포함하는 식용 유지; 알룰로스; 유화제; 및 물을 포함하는 스프레드 제조용 조성물로서,
상기 식용 유지는, 상기 스프레드 제조용 조성물 100중량부를 기준으로, 상기 리놀레산계 식물성 유지 25-40 중량부, 팜올레인유 15 내지 30중량부 및 에스테르교환유 20-30중량부로 포함하고,
상기 스프레드 제조용 조성물 100중량부를 기준으로, 상기 알룰로스는 1 내지 10 중량부로 포함되며,
상기 조성물로 제조된 스프레드는 36 내지 40℃ 온도에서 1.5 J/g이상의 상변이 에너지를 갖는 것인 스프레드 제조용 조성물. - 제 1 항에 있어서, 상기 리놀레산계 식물성 유지는 대두유, 아마인유 및 들기름으로 이루어지는 군에서 선택된 1종 이상인 조성물.
- 제 1 항에 있어서, 상기 에스테르교환유는 팜에스테르화유, 야자에스테르화유, 대두에스테르화유 및 팜스테아린 에스테르화유로 이루어지는 군에서 선택된 1종 이상인 조성물.
- 삭제
- 제 1 항에 있어서, 상기 유화제는 HLB(hydrophile-lipophile balance) 0 내지 6를 가지는 유화제로서, 레시틴, 모노글리세린지방산에스테르, 솔비탄지방산에스테르 또는 폴리글리세린폴리리시놀레이트인 조성물.
- 제 1 항에 있어서, 상기 스프레드 제조용 조성물 100중량부를 기준으로, 상기 유화제는 0.01 내지 3 중량부로 포함하는 것인 조성물.
- 삭제
- 제 1항에 있어서, 상기 조성물은 설탕 및 포도당으로 이루어지는 군에서 선택된 1종 이상의 추가 당류를 포함하는 것인 조성물.
- 제 1항에 있어서, 상기 스프레드 제조용 조성물 100중량부를 기준으로, 물은 10 내지 15중량부로 포함하는 것인 조성물.
- 제 1항에 있어서, 상기 스프레드 제조용 조성물 100중량부를 기준으로, 리놀레산계 식물성 유지 25-40 중량부, 팜올레인유 15 내지 30중량부, 에스테르교환유 20-30중량부, 유화제는 0.05 내지 3 중량부, 알룰로스는 2 내지 10 중량부, 및 물 10 내지 15 중량부로 포함하는 조성물.
- 제 1 항에 있어서, 상기 알룰로스는 혼합당 시럽 또는 상기 혼합당 시럽으로부터 제조되는 분말형태로 제공되며, 상기 혼합당은 전체 혼합당의 고형분 100중량부를 기준으로 1 내지 99.9 중량부의 알룰로스와, 과당, 포도당, 및 올리고당으로 이루어지는 군에서 선택된 1종 이상을 추가로 포함하는 것인, 조성물.
- 제 11 항에 있어서, 상기 혼합당은, 혼합당의 총고형분 함량 100 중량부 기준으로 알룰로스 2 내지 55 중량부, 과당 30 내지 80 중량부, 포도당 2 내지 60 중량부 및 올리고당 0 내지 15 중량부로 포함하는 것인 조성물.
- 제 11 항에 있어서, 상기 스프레드는 36 내지 40℃ 온도에서 1.5 J/g 내지 20 J/g의 상변이 에너지를 갖는 것인 조성물.
- 제1항 내지 제3항, 제5항, 제6항, 및 제8항 내지 13항중 어느 한 항에 따른 스프레드 제조용 조성물을 혼합하여 제조되며, 36 내지 40℃ 온도에서 1.5 J/g이상의 상변이 에너지를 갖는 스프레드.
- 제 14항에 있어서, 고상인 스프레드.
- 제 14항에 있어서, 상기 스프레드는 리놀레산계 식물성 유지, 팜올레인유 및 에스테르교환유를 포함하는 식용 유지 및 유화제를 포함하는 유상부를 제조하고, 알룰로스 및 물을 포함하는 수상부를 제조하고, 상기 유상부와 수상부를 혼합하여 에멀젼을 제조하는 것인 스프레드.
- 제14항에 있어서, 제과제빵용으로 사용되는 것인 스프레드.
