Abstract
본 발명에 의하면, 바이오필름을 형성함으로써 종래의 살균 제어 수단으로부터 보호막을 형성하는 병원성 미생물을 효과적으로 제거하는 방법을 제공함으로써, 식품을 제조, 가공하는 설비 표면에 부착되어 바이오필름을 형성하는 병원성 미생물을 완벽한 수준으로 제거할 수 있다.
Description
도 2는 병원성 미생물과 일반 미생물의 다양한 살균제에 대한 민감도를 측정하는 실험의 PCA 분석 결과값을 나타낸 그래프.
도 3은 본 발명의 일실시예에 따른 차아염소산나트륨과 플라즈마의 복합처리시 살균 제어 효과를 나타낸 그래프.
도 4는 본 발명의 일실시예에 따른 이염화이소시아뉼산나트륨과 플라즈마의 복합처리시 살균 제어 효과를 나타낸 그래프.
도 5는 본 발명의 일실시예에 따른 차아염소산수와 플라즈마의 복합처리시 살균 제어 효과를 나타낸 그래프.
도 6은 본 발명의 일실시예에 따른 이산화염소제제와 플라즈마의 복합처리시 살균 제어 효과를 나타낸 그래프.
도 7은 비교예로서 과산화수소와 플라즈마의 복합처리시 살균 제어 효과를 나타낸 그래프(병원성 대장균).

Claims (10)
- 미생물에 의해서 식품가공 공정에서 사용되는 장치 표면에 형성된 바이오필름을 제거하는 방법에 있어서,
(a) 바이오필름이 형성된 식품가공 공정에서 사용되는 장치 표면에 염소계 살균제를 처리하는 단계;및
(b) 상기 염소계 살균제 처리된 표면에 플라즈마를 처리하는 단계
를 포함하는 복합처리에 의한 바이오필름 제거 방법.
- 제1항에 있어서,
상기 (a)단계 후에 염소계 살균제를 세척하는 단계를 더 포함하는 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
- 삭제
- 제1항에 있어서,
상기 염소계 살균제는 삼염화이소시아뉼산, 삼염화이소시아뉼산나트륨, 삼염화이소시아뉼산칼륨, 아염소산염, 염소산염, 이산화염소, 이산화염소시아뉼산, 이산화염소시아뉼산나트륨, 이산화염소시아뉼산나트륨이수화물, 차아염소산, 차아염소산나트륨, 차아염소산리튬, 차아염소산칼륨 및 차아염소산칼슘으로 이루어진 군에서 선택된 1종 이상인 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
- 제1항에 있어서,
상기 염소계 살균제는 차아염소산나트륨, 이염화이소시아뉼산나트륨, 차아염소산수 및 이산화염소로 이루어진 군에서 선택된 1종 이상인 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
- 제1항에 있어서,
상기 바이오필름을 형성하는 미생물은 E. coli , Acinetobacter , Bacillus, Kocuria, Staphylococcus, E. sakazakii , L. monocytogenes , Salmonella, Staph. aureus, V. parahaemolyticus로 이루어진 군에서 선택된 1종 이상인 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
- 제1항에 있어서,
상기 플라즈마 처리 공정은 Ar zet, air zet 및 오존발생장치로 이루어진 군에서 선택되는 1종 이상을 사용하는 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
- 제7항에 있어서,
상기 Ar zet는 OH, O3 라디칼을 발생시켜 사용하는 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
- 제7항에 있어서,
상기 air zet는 NO 라디칼을 발생시켜 사용하는 것을 특징으로 하는 복합처리에 의한 바이오필름 제거 방법.
