Abstract
본 발명은, 곡분을 실질적으로 포함하지 않는 구운 과자로서, 40~80질량%의 지질, 1~10질량%의 단백질, 5~25질량%의 당질을 포함하고 있으며, 상기 지질에는, 구성 지방산으로서 탄소수 6~12의 중쇄지방산을 갖는 트리아실글리세롤이 상기 유지의 50질량% 이상 포함되어 있는 구운 과자이다.

Claims (11)
- 곡분의 함유량이, 구운 과자의 원료를 기준으로 하여 3질량% 미만인 구운 과자로서, 40~80질량%의 지질, 1~10질량%의 단백질, 5~25질량%의 당질을 포함하고 있으며, 상기 지질에는, 구성 지방산으로서 탄소수 6~12의 중쇄지방산을 갖는 트리아실글리세롤이 상기 지질의 50~100질량% 포함되어 있는, 구운 과자.
- 제1항에 있어서,
상기 지질이, 액상유, 마가린, 지방 스프레드, 쇼트닝 및 분말 유지에서 선택되는 1종 또는 2종 이상인 구운 과자. - 제1항에 있어서,
상기 중쇄지방산을 갖는 트리아실글리세롤의 구성 지방산이, 탄소수 6~12의 중쇄지방산만으로 구성되어 있는 구운 과자. - 제1항에 있어서,
상기 중쇄지방산을 갖는 트리아실글리세롤의 구성 지방산이, 탄소수 8, 10 또는 12의 중쇄지방산만으로 구성되어 있는 구운 과자. - 제1항에 있어서,
상기 단백질이, 난백 또는 전란(全卵)에서 유래하는 것을 포함하고 있는 구운 과자. - 제1항에 있어서,
상기 구운 과자가, 감미료를 포함하고 있는 구운 과자. - 제1항에 있어서,
상기 구운 과자는, 50~70질량%의 지질, 2~8질량%의 단백질, 7~25질량%의 당질을 포함하고 있는 구운 과자. - 제1항에 있어서,
상기 구운 과자 100g당의 에너지가, 450~750킬로칼로리인 구운 과자. - 제1항에 있어서,
상기 구운 과자에 있어서, 단백질(P)과 당질(C)의 합계에 대한 지질(F)의 비율(「F/(P+C)」)이, 1.8~4.0인 구운 과자. - 제1항에 있어서,
상기 구운 과자가, 쿠키 또는 구운 도너츠인 구운 과자. - 제1항 내지 제10항 중 어느 한 항에 기재된 구운 과자를 포함하는 식품.
