Abstract
본 발명에 따른 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법은 (a) 글루타메이트를 포함하는 배지에 유산균을 접종하고, 증식 배양시키는 단계; (b) 유산균이 배양된 배지에 소금을 첨가한 후, 재 배양시키는 단계; (c) 재 배양된 배지를 여과시키는 단계; 및 (d) 여과된 배양액을 건조시켜 소금을 회수하는 단계를 포함한다.
본 발명에 따른 발효소금은 인체에 유해한 나트륨은 저감되고, 다양한 생리활성을 갖는 GABA를 포함하고 있으므로, 고혈압과 같은 대표적인 성인병 예방에 유용하다.
Description
도 2는 본 발명의 일 실시예에 따른 유산균(L. brevis BJ-20)의 발효시간에 따른 GABA 함량을 나타낸 그래프이다.
도 3은 일반 소금(정제염)의 나트륨 함량을 측정한 분석결과서이다.
도 4는 본 발명의 일 실시예에 따른 유산균(L. brevis BJ-20) 배양액을 이용한 발효 전후의 나트륨 제거율을 나타낸 그래프이다.
도 5는 본 발명의 일 실시예에 따라 유산균(L. brevis BJ-20)으로 발효시킨 소금의 나트륨 함량을 측정한 분석결과서이다.
도 6은 본 발명의 일 실시예에 따라 소금이 첨가된 배지를 발효시킨 유산균(L. brevis BJ-20)에 함유된 나트륨 함량을 측정한 분석결과서이다.

Claims (10)
- (a) 글루타메이트를 포함하는 배지에 유산균을 접종하고, 증식 배양시키는 단계;
(b) 유산균이 배양된 배지에 소금을 첨가한 후, 재 배양시키는 단계;
(c) 재 배양된 배지를 여과시키는 단계; 및
(d) 여과된 배양액을 건조시켜 GABA를 함유하고, 나트륨의 함량이 5~10g/100g인 소금을 회수하는 단계를 포함하는 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법에 있어서,
상기 소금은 유산균이 배양된 배지 100중량부에 대하여 20~30중량부를 첨가하며, 상기 유산균은 나트륨을 섭취하고, 글루타메이트를 GABA로 전환시키는 대사능을 가지는 락토바실러스 브레비스(Lactobacillus brevis) BJ-20(KCTC 11377BP)인 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법.
- 제1항에 있어서, 상기 배지는 글루타메이트를 1~10중량% 포함하는 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법.
- 제1항에 있어서, 상기 배지는 이스트 추출물(Yeast extract) 4%, 글루코스(Glucose) 4%, MSG 6% 및 물(Water) 86%로 구성된 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법.

- 제1항에 있어서, 상기 유산균의 증식 배양은 25~40℃에서 2~4일 수행하고, 소금이 첨가된 배지에서의 재 배양은 25~40℃에서 3~4시간 수행하는 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금의 제조방법.
- 제1항 내지 제3항 및 제8항중 어느 한 항의 제조방법으로 제조되고, 5~10g/100g의 나트륨을 포함하는 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금.
- 제9항에 있어서, 상기 발효소금은 GABA의 함량이 4~6g/100g인 것을 특징으로 하는 GABA를 함유하고 나트륨이 저감된 발효소금.
