Claims (10)
- 탄소수 6 이상 12 이하의 포화 지방산 20~55중량%와 탄소수 20 이상 22 이하의 포화 지방산을 3~8중량% 포함하는 랜덤(random) 에스터 교환 유지 A, 및 탄소수 12의 포화 지방산 35중량% 이상을 포함하는 비-에스터 교환 유지인 라우린계 유지 B를 필수 성분으로 하는 트랜스형 불포화 지방산이 10% 이하인 피복 초콜렛용 유지 조성물.
- 청구항 1에 있어서,
유지 조성물 중에 유지 A가 15∼70중량%인 피복 초콜렛용 유지 조성물. - 청구항 1에 있어서,
유지 조성물 중에 유지 B가 30∼80중량%인 피복 초콜렛용 유지 조성물. - 청구항 1에 있어서,
아세틸화 수크로오즈 지방산 에스터를 배합하여 이루어진 피복 초콜렛용 유지 조성물. - 청구항 1 내지 청구항 4 중 어느 한 항에 기재된 유지 조성물을 초콜렛 전체에 대하여 25∼70중량% 사용하여 이루어진 피복 초콜렛.
- 청구항 5에 기재된 피복 초콜렛을 사용하여 제조된 복합 식품(composite food).
- 청구항 6에 있어서,
식품이 과자 또는 베이커리 제품인 복합 식품.
