Abstract
보다 구체적으로, 본원 발명은 식품에 사용 가능한 폴리에틸렌 글리콜계 비이온성 계면 활성제를 이용하여 균체를 사멸화시킴으로써, 식품 제조에 사용할 수 있도록 균체를 사멸화시키는 방법 및 그 사멸화 균체 함유물에 관한 것이다.
또한, 본원 발명은 폴리에틸렌 글리콜계 비이온성 계면 활성제를 이용하여 갈락토스(Galactose) 및/또는 아라비노스(Arabinose) 이성화 효소(isomerase)를 생산하는 코리네박테리움(Corynebacterium)속 균체를 사멸화시킴으로써, 타가토스 제조 공정에 사용할 수 있는 사멸화 균체 함유물에 관한 것이다.

도 2는 실시예 2에 따라, 50℃에서 균체의 사멸화 처리 후 효소의 잔존 활성을 측정한 결과를 나타낸 그래프이다.

Claims (9)
- 코리네박테리움(Corynebacterium)속 균체 또는 코리네박테리움 균체가 함유된 배양물에 폴리옥시에틸렌 지방산 아미드를, 상기 균체 또는 상기 균체가 함유된 배양물을 기준으로, 1 내지 8 % 농도(w/w)로 10 내지 60℃의 온도 범위에서 처리하여 상기 균체를 사멸화하는 단계를 포함하는, 타가토스의 제조 방법.

- 제1항에 있어서, 상기 코리네박테리움속 균체는 갈락토스(Galactose) 또는 아라비노스(Arabinose) 이성화 효소(isomerase) 생산능을 갖는 것인, 타가토스의 제조 방법.

- 코리네박테리움(Corynebacterium)속 균체 또는 코리네박테리움 균체가 함유된 배양물에 폴리옥시에틸렌 지방산 아미드를, 상기 균체 또는 상기 균체가 함유된 배양물을 기준으로, 1 내지 8 % 농도(w/w)로 10 내지 60℃의 온도 범위에서 처리하여 상기 균체를 사멸화하여 얻어진 균체 함유물을 타가토스의 제조에 사용하는 방법.
- 제5항에 있어서, 상기 코리네박테리움속 균체는 갈락토스(Galactose) 또는 아라비노스(Arabinose) 이성화 효소(isomerase) 생산능을 갖는 것인, 타가토스의 제조에 사용하는 방법.
