도 4는 본 발명에 따른 유지 제조과정에서 3-MCPD-FS 함량을 분석한 결과를 나타낸 그래프이다.

Claims (4)
- 원유를 탈검, 탈산, 탈색 및 탈취후 제품화하는 식용유지 제조방법에 있어서, 사용하는 수도물 중에 존재하는 염소이온을 제거하는 단계를 포함하는 것을 특징으로 하는 3-클로로-1,2-프로판디올 생성물질(이하, '3-MCPD-FS'라 함)을 저감화하는 식용유지의 제조방법.
- 제1항에 있어서, 상기 식용유지는 콩기름, 옥수수기름, 채종유, 미강유, 참기름, 들기름, 고추씨기름, 향미유, 홍화유, 해바라기유, 목화씨기름, 땅콩기름, 올리브유, 팜유, 야자유, 혼합식용유, 가공유지 중 어느 하나인 것을 특징으로 하는 식용유지의 제조방법.
- 제2항에 있어서, 상기 가공유지는 디아실글리세롤 함량이 10%이상인 것을 특징으로 하는 식용유지의 제조방법.
- 제1항 내지 제3항 중 어느 하나의 방법으로 제조되어 식용유지의 3-MCPD-FS함량이 0.3ppm이하인 것을 특징으로 하는 식용유지.
