따라서, 본 발명에 의하면 별도의 구슬아이스크림 전용 냉동고를 설치하지 않아도 기존의 냉동고에 보관할 수 있는 구슬아이스크림을 제조할 수 있다.

Claims (4)
- 노즐을 통하여 구슬모양으로 적하시켜 액체질소로 냉동시키는 구슬아이스크림 조성물에 있어서,
젤라틴 0.01 내지 0.75 중량%, 변성전분 0.01 내지 0.75 중량%, 안정제 0.2 내지 0.5 중량%, 당류 6 내지 12 중량% 및 합성감미료 0.01 내지 0.025 중량%를 포함하여 이루어진 것을 특징으로 하는 구슬아이스크림 조성물. - 제1항에 있어서,
상기 합성감미료는 수크랄로스인 것을 특징으로 하는 구슬아이스크림 조성물. - 제1항에 있어서,
상기 당류는 정백당 3 내지 6 중량% 및 결정과당 3 내지 6 중량%를 포함하는 것을 특징으로 하는 구슬아이스크림 조성물. - 노즐을 통하여 구슬모양으로 적하시켜 냉동시키는 구슬빙과 조성물에 있어서,
젤라틴 0.01 내지 0.75 중량%, 변성전분 0.01 내지 0.75 중량%, 안정제 0.2 내지 0.5 중량%, 정백당 3 내지 6 중량%, 결정과당 3 내지 6 중량% 및 수크랄로스 0.01 내지 0.025 중량%를 포함하여 이루어진 것을 특징으로 하는 구슬빙과 조성물.
